I made this loaf into 11 muffins. Yummy! A mess to make because of the glaze but very worth it. I used pineapple juice in the glaze instead of orange, but the muffin is still orange. I also made it vegan by using egg replacer, vegan butter, and vegan white sugar. Give these a try, highly recommended!
