Working on a degree to become a math middle and high school math teacher. I love to cook and have been a vegetarian since January of 2009. Want to become a vegan, which isn't as easy as becoming a vegetarian in my opinion. Very happily married to "The Stick Man" since November of 2009.
My favorite things to cook
Veggie soup (take something like split pea and throw veggies and potato into it), sweet potato burritos, stir fries with rice, spaghetti squash with veggies and tomato based sauce, veggie or cheese pizza, peanut butter and strawberry sandwiches

My cooking triumphs
People love my fruit pizzas, which are really unhealthy but people love them on the rare chance I make them. Before I became a vegetarian I also used to make a seafood salad, the recipe of which my aunt gave me.
My cooking tragedies
The one time I tried to make vegetable soup from scratch. Oy vey it was awful! It was REALLY healthy, but REALLY gross. :P There was also the Thanksgiving I was making dinner. Had to run out and buy restaurant turkey because mine went bad and the BEAUTIFUL pecan pie came out raw underneath... but it was so pretty!

Orange Loaf
This recipe is absolutely wonderful! I made it vegan by: using egg replacer, vegan butter, and vegan white sugar. I also made the glaze with pineapple juice instead of orange and let it reduce a bit (I still used orange in the loaf itself). This recipe makes 11 regular sized muffins. Highly recommended. If you make this into muffins bake until brown (it won't take an hour, keep an eye on it!). Grease it up good before pouring into the pan!

Peanut Butter Frosting
Really good frosting and I would make it again with some additional modifications. I altered the recipe to be vegan, using vegan butter and unsweetened almond milk instead of cream. I only used 3 cups of sugar, I'll probably just use 2 next time. I would also reduce the amount of butter a bit, but that's not a big deal. It still made a wonderful filling for my chocolate cake with peanut butter frosting between the layers. I used organic peanut butter, the kind you need to mix up due to separation, and it was still great. Thanks for the recipe!

Vegan Chocolate Cake
Wonderful cake! I made two of these in a 9 inch circular pan and reduced the baking time due to the different size and shape pan. Used mostly apple sauce in place of oil with just a small splash of olive oil (didn't have vegetable oil on hand). Tastes wonderful and holds together beautifully. Not crumbly, wonderful flavor, and moist. I followed the advise of someone here, making the complete cake a day before serving and refrigerating it overnight to let the flavors settle. Highly recommended cake, thank you for the recipe! PS: For those worried that white sugar is not vegan, there are white sugars made specifically for vegans. More expensive but animal friendly! :)
