Vegan Black Bean Soup

First time making this recipe so I halved the ingredients just in case it wasn't a big hit as many reviewers posted. I adjusted the spices to our tastes, left out celery since it's been banned from our house, and added some of the tomato to the soup before blending the can (to give some more texture). The soup is good, but not amazing. Maybe some different chilies/peppers would put it above the rest. Still, needed quite a bit of tweaking, so 3 stars for the recipe as is. I served it with polenta wedges which were a good compliment.

Oatmeal Date Cookies

These were good but too sweet for my family. Next time I will add more dates and cut down on the white sugar. I also made these vegan by using flax for the eggs which gave it a great texture and a nutty flavor without adding the walnuts.

Eggplant Mixed Grill

This is a simple and effective way to grill veggies. I altered the spices a little because I had to use dried herbs, but it was still very tasty. I also added some extra white vinegar for extra tang. Next time I will probably allow the veggies to sit for longer than 2 hours so that they really absorb all the flavor. I cooked everything on a grill pan and it turned out better than expected.

Strawberry Oatmeal Breakfast Smoothie

As is the recipe is OK. I was not a fan of the texture when I first made this smoothie, so I put the oats in the food processor first (as others have stated). I used 3/4 cup of soy milk and a 6oz container of fat free vanilla yogurt instead of the extract. I omitted the sugar in part because of the yogurt, but added a drizzle of honey in the end to get the right sweetness. I also felt it was not 2 servings if you want to have it replace your breakfast.

Linguine with Portobello Mushrooms

As is the recipe needs help. There is not enough liquid as many people have already stated. I doubled the liquid, tripled the garlic, and added parmesan (also like many others). As a base it is decent, but the recipe needs significant tweaking to be good.

Apple Strudel Muffins

As it is, this recipe is lacking. Similar to other posters, I had to do some serious alterations to the original recipe to get the muffins to turn out close to how I was hoping. I used 1/2 cup brown sugar and 1/2 cup white, used 3 apples (1 shredded, 2 cubed) added allspice and cinnamon (to taste) and only 1tsp of vanilla. The crumb topping also needed much more flour (1/4 cup) and more cinnamon otherwise it melts and does not stay...crumbly. This recipe can turn out OK, but you do need to do some serious tweaks!!

Oatmeal Raisin Cookies I

I just made this recipe after searching for days for my mom's lost family recipe. I did what most people suggested and added 1/4 cup more flour and 1/2tsp baking powder to make sure the cookies didn't spread out too much. I alter all of these recipes to fit into my boyfriend and my vegan lifestyle (butter substitute and egg replacer) and this recipe turned out great. I will definitely use this recipe in the future, maybe adding some nuts next time...
