Potato, Bacon, and Corn Chowder

Yummm. I only use 2 cups of milk and used water. It came out very good. I don't think I will use the full 4 cups b/c it is creamy enough to suit me. Used fresh corn instead since it was on sale and sliced in some baby bellos. I read some reviewers found the recipe was missing some flavor...throw in some green onions, shredded cheese or croutons! I love it with green onions!

World's Best Potato Salad

I am really glad I chose to try to recipe because the flavor was exactly what I was looking for! I doubled the cornstarch, only used 5 eggs total since that was all I had on hand and also used powdered milk because I did not have evaporated milk, but no matter, it came out delissssh. I added some chopped dill pickle, chopped pepperoncini, a dash of paprika and pepper to suit my taste. It's so good, I couldn't wait for it to chill and on my second helping!

Homemade Crispy Seasoned French Fries

This recipe is a keeper. Mine turned out DELISSSSH. I used seasoning salt and garlic salt instead of onion salt bc that is what I have on hand and also had to add quite a bit more water. I did pat down the slices after cutting, but I did not need to soak them since I only used 2 potatoes and fried them quickly.

Dangerous! This recipe is so seriously good. I've made this recipe numerous times. It's always a hit. I like to top it with cream cheese frosting.

Sweet Potato Rolls

I agree this roll is good with soups and stews, but it really does need more flavor to stand alone. I read some reviews and increased the sweet potatoes but my husband and I could barely note it. I made this for Thanksgiving, and it was very good when we drenched it in gravy. I will make this again because I do like the texture and it goes great with soup, but will alter it a bit to suit my palate better.

Fabulous Homemade Bread

Fabulous indeed. It love that the bread is dense and soft. I eat it toasted with honey butter for breakfast. It is also great for grilled cheese. Made it the old fashion way since I don't have nice kitchen toys, but it was easy and really worth it. I halved the recipe. Baked one loaf right away and froze the other two. I took out the frozen to bake several weeks later and it was just as good.

Nacho Cheese Sauce

Grandma's Secret Pie Crust

I made this without reading the reviews first. My pie crust came out nice and flaky. Then I decided to read some reviews. I agree that this will make for an awesome pot pie. If you plan on using this for dessert pies, I suggest reducing or omitting the salt, and rather, sprinkle sugar on it before baking. Also, I used Crisco butter flavored shortening at room temperature. It's very hot and humid here, so after I cut the ingredients together and rolled it, I had to put it in the freezer for a few minutes so that it would not break when I put it the pan. For those who are having trouble with the dough, just remember that temp/humidity affects the dough. Slowly add the liquid portion to the mix...if your dough is too sticky, try adding a bit more flour, slowly.

Cambodian Tapioca-Banana Pudding

I just made this for dessert. There really is no need for all the extra prep work with the tapioca. I used 3/4 of small pearls with 3 cups of water. Bring to boil, reduce to simmer and cover. Stir about 3 times to prevent the pearls from sticking to the pot. It will thicken and look gooey, but no worries. After about 10-15 mins, dump a can of coconut cream/milk and stir. You will be able to see your pearls again after putting in the cononut milk/cream. Try to find a banana variety with thick skin, those cook and taste better. Slice the banana about 3/4" thick and throw it in the pot. Keep the cover on and turn off heat. The banana will continue to cook as the pudding cools--about 10 mins. I cracked a young coconut and used a peeler to get thin slices to mix in the pudding.

Double Chocolate Chip Bundt Cake

wow. I just snuck a little piece (no one will know since it will be flipped, hehe) and it is amazing! it's still in the oven...about 15 mins left. I had to slightly modify the chocolates as I only had random chocolate chips on hand.

Chuck's Favorite Mac and Cheese

WIN! Everyone loved this Mac and Cheese, even the kiddies. I lightly brown Panko bread crumbs before topping it and covered with foil for the first 15 mins. I also added some milk as other suggested. When I make this again, I will probably add Velveeta or something to make it creamier.
