Fantastic Black Bean Chili

Very good start. Next time I will increase spices and salt - specifically cumin. Will also add chili peppers. If you like spicy foods, use this as a base and dress it up.

Raspberry Tilapia

Lots of flavor! I used Swai instead of Tilapia - not sure it was a good replacement. However, the "sauce" is really good and would work well on chicken - plan to try that next.

Gomen Wat

This is fantastic. I am going to make more tomorrow! My gold standard (until now) for collards was southern style - cooked in pork back. Move over Paula Dean, Gomen Wat is my new favorite way to prepare collards! I did have to make a couple changes: I used ginger paste (shame, shame, I know), jar garlic (8 cloves is a lot to mince, sister), and store bought lemon juice. I did put a pinch of salt in the water to boil the collards and I doubled the tumeric and allspice. This dish is perfectly balanced. In my experience with Ethiopian cooking (limited), I have found the flavors are even better the next day. I've made this dish a few hours ahead of dinner time so it can develop a little .

Mushroom Lentil Barley Stew

Your house will smell fantastic while this cooks. Made it on a rainy, chilly day and served with french bread. Needs a little more body" . Next time I am going to try adding a little marsala.

Moroccan-Style Stuffed Acorn Squash

This is amazing!! The stuffing alone makes a nice side dish. In my haste, I forgot to do the butter and brown sugar but it still turned out super! In the future, I'm just going to save us the fat and sugar and skip in! When I baked the acorn squash, I did so in a glass 8x11 and put about 1/2 inch of water in the bottom.

Cilantro Lime Cod

This is really good. I used lemons not limes and did not use cumin. If you use fresh lemons instead of bottled lemon juice, you'll get a little sweetness. It will get bitter if you let the fish sit in the lemon juice too long.

Cream of Sweet Potato Soup

This is really good. I made the following changes: I did this in my slow cooker: peel/cut up the sweet potatoes and put in the crock pot with broth/water, brown sugar, nutmeg and pepper. Low for 6 hours. Then use immersion blender to puree, add whole milk, and mix with immersion blender again. Enjoy! Am going to try with apples instead of brown sugar - will post my modification if it turns out!

Slow Cooker Chile Verde

This is very good but VERY spicy. The next time I make this I will cut way back on the jalapeno peppers. That is just my personal preference. I used pork loin since it was on sale when I was shopping for ingredients and did not cook at all in advance. The pork was nice and tender when we ate the soup.

Catfish Tuscany

This was really great! I followed the suggestion of cooking the fish then adding the topping and broiling to melt the cheese. For us, this resulted in the catfish being a little overdone, next time I will follow the recipe exactly. Otherwise, the flavor is really good. I used fresh tomatoes from the garden between the topping and the fish. Historically, I thought of catfish as a "" fish that really wasn't good for eating. Boy was I mistaken!

Pesto Cheesy Chicken Rolls

Excellent! made the following changes - dredge the rolled chicken in one beaten egg and coat with Italian bread crumbs. garnish with fresh grated parm. cheese. yum! served with spinach and pasta.

Easy Fruit Cobbler

OMG this is fantastic! Its also super easy. I have made it with peaches and then again with blueberries. I would say I preferred the blueberry cobbler, but that's just a fruit preference. I did add the vanilla and the sprinkling of brown sugar over top. Also, I mixed the butter that is melted in the baking dish with the batter just a little bit. This seemed to be better than the time that I did not do so.

Quick and Easy 20-Minute Chicken Posole

Another recipe for my "favorites" book. This has become a standby recipe for the "i don't have time and don't know what to make" nights. This really tastes like its been in the crock pot for hours! The best part is that I can make it and attend to other things - like emptying and refilling the dishwasher, etc.

Fresh Asparagus Soup

This was terrific - followed the recipe exactly. I reheats very well. Make sure you rinse your asparagus thoroughly - evidently I didn't do as good a job as I thought the first time I made this and I had a couple of gritty spoonfuls!

Slow-Cooker Barbecue Ribs

This was fantastic! My grocery store had spare ribs on sale so I used those, I also used one cup ketchup and one cup Masterpiece Kansas City Original BBQ Sauce instead of 2 cups ketchup! This recipe is going in my "favorites" cookbook! The ribs were so tender and the sauce turned out sweet and tangy.
