Butter Lamb Gravy

I normally make first-time recipes exactly per the instructions, but after reading several reviews I decided to play with the spice amounts a bit. I ended up using 4x the garam masala just to coat the lamb and doubled all the other spices that went into the dish as well as doubling the liquids for added gravy. I thought it turned out pretty decent, but still just a bit bland. I served it over basmati rice and had a side of garlic naan from my local ethnic grocer. I would probably make it again if lamb weren't so expensive ($10/lb) and I hadn't already found a similar chicken recipe. Overall, it was still pretty good and easy to make. Definitely worth a try, just make sure you add some spices.

Penne with Spicy Vodka Tomato Cream Sauce

Very good, easy to make, and inexpensive! I made this recipe without any changes and it came out wonderful. I used a food processor to chop the sausage for the sauce and then browned the meat a little longer with the garlic to bring out all the flavors. The texture was perfect for the sauce. I also browned a few extra links of the Italian sausage and sliced them up to use as a garnish/side. The full recipe makes a TON of food, but the leftovers are just as good as the first time around. This is definitely a repeat recipe for me!

Paella

Overall this is a good recipe, but it just wasn't a true Paella. I made this dish per the recipe and found it fairly easy to make. There are quite a few steps, but they're all easy and everything times together pretty well. The main reason that I didn't give this recipe 5 stars is because the Italian sausage just doesn't belong in this dish. Its completely wrong. I highly recommend using Chorizo instead. As for the seasoning, many other reviewers recommend using saffron, which I would try as well. Those changes would be enough to make this a true Paella and a recipe worthy of 5 stars.

Spiced Pumpkin Seeds

After carving a few pumpkins, I separated the seeds and threw this recipe together. The recipe itself was easy to make. I did everything per the recipe, increasing the ingredients to make 3 cups of seeds. I ended up having to bake the seeds a little longer than the recipe called for, but that wasn't too big of a deal. Unfortunately, the end result was a bit bland for my taste. I've read a few other reviews that suggested doubling the dry ingredients and I would probably recommend this as well. Overall, this recipe was a good place to start, but still needed more to make it great.

Smooth Poblano Salsa

PERFECT!!! I made this recipe last night and I can't stop eating it! I made the salsa exactly as the recipe stated (except maybe a little light on the salt), using my own home-grown poblanos and jalapenos. I was impressed by how quick and easy it was to make, especially when compared to traditional salsas. The flavor was outstanding! It was the cool, creamy flavor of a good guacamole followed by a nice kick of spice. I would almost qualify this recipe as closer to a spicy guacamole than a salsa. I can't wait to make this for my next house party! This may not replace the salsa at my next party, but it will definitely be my new go-to guacamole dip!

Pepperoni Stuffed Mushrooms

My girlfriend cooked these up as an appetizer/snack for a football game. The recipe seemed pretty easy to follow and everything went together well. The flavor was great, a nice alternative to a seafood stuffed mushroom. The only thing we didn't like about this recipe is that the stuffing just didn't seem to have the right consistency. It was a little to mushy for us. We may try again and add more cracker crumbs or something to create a better consistency in the stuffing.

Jalapeno Cheese Bread

This was my first attempt at baking bread and I thought it would be a good one to try since I have a garden full of jalapenos right now. The recipe was fairly easy to follow. I did cut it down to 1/3rd, to make just one loaf. I may have put in slightly too much flour in the conversion process because it seemed like I had to add more water than the recipe called for. Also, when done, the bread was a little dry for my taste. Other than that, it really turned out well. Just the right amount of heat from the peppers. I think I'll try this one again, maybe adapting it to a good Italian bread recipe or maybe even a sourdough.

Chicken Tikka Masala

This recipe was outstanding! The only reason I didn't give it five stars is because I felt it had too much salt in it. There are a lot of different components to this dish, so it will keep you fairly busy, especially if you're trying to time it with a side of rice. I managed to time everything fairly well and served the chicken over some basmati rice. I really liked the flavor and it had a nice amount of spicy heat to it, but not too hot. I will definitely be making this again, but I'll probably cut the amount of salt in half.

Firecracker Grilled Alaska Salmon

Two thumbs up! This is one of the best salmon recipes on this site! It was very easy to make and despite the seemingly long list of ingredients, I had everything in my pantry that I needed. After letting the fish marinate for about 4-5 hours, the flavor was great without overpowering and contrary to its name, it wasn't too spicy (although it did have a mild heat). I'll definitely be making this again!

Creolized Stuffed Chicken Breasts

One of the best chicken recipes I've made yet! My girlfriend said its one of her all-time favorites from this entire site! The flavor is rich and complex, but the prep is relatively easy. I'm not normally a fan of blue cheese, but it added just the right punch to this recipe. I made everything per the recipe and was surprised at how easily everything went together. It may seem ccomplex when reading the recipe, but I was able to do most of my prep work while other stuff was cooking. Absolutely fantastic! I'll definitely be making this again!

Quick Eggplant Parmesan

Quick and easy! While I'm still working on my pan frying skills and this was my first time cooking eggplant, everything turned out perfect! The recipe couldn't be any easier. I used one of my home-grown eggplants and then used some store-bought pasta sauce and angel hair pasta to finish out the dish. This one's a keeper!

Stuffed Eggplant with Shrimp and Basil

My girlfriend made this recipe with some of our home-grown eggplants. She's a big fan of eggplant and she's been looking for more ways to get me to eat them. I have to say, if she keeps making eggplant recipes like this one, I'll be a fan in no time! The flavor of the stuffing was great and the shrimp was a nice added bonus. We have quite a few more eggplants in the garden, so I look forward to eating this dish again!

Grandpa's Classic Coney Sauce

I made this coney sauce per the recipe and I have to say I was kindof dissappointed. I understand that this is not a recipe for hot dog chili, but I still expected it to have some chili-like flavor. The flavor of this sauce was more like sloppy joe filling. This is not a flavor that I normally associate with hot dogs. I think I'm just going to keep looking for a more chili-like recipe.

Slammin' Salmon

This is an excellent salmon recipe! Easy to make and out of this world flavor! I make this per the recipe and let the salmon marinate for about two hours. This provided great flavor for the salmon without overpowering it. The only variation I made was to leave the skin on the salmon fillets. I find that this works better on the grill. I'll definately be making this again!

Flank Steak with Avocado Salsa

This was an absolutely great combination! Although I'm typically not a fan of grilling flank steak, this steak turned out wonderful! The spice rub was perfect and when cooked properly, even flank steak can be juicy and tender. The avocado salsa was equally great, although more of a side dish than a garnish. The recipe makes a ton of salsa. In the future, I'll probably cut the salsa ingredients in half and maybe quarter the amount on onion. Other than that, I wouldn't change a thing. As recommended, I served this dish with a side of cilantro-lime rice and I was very impressed with the overall results. Definately a keeper!!!

Lime Cilantro Rice

This rice dish is a great, light alternative to traditionally heavily flavored mexican rice. It was super easy to make and had plenty of flavor. I made mine using some Jasmati rice I had in the pantry and I cut back a bit on the cilantro (I'm not a huge fan of cilantro to begin with). The rice was perfect!

Absolutely fantastic! This is the perfect recipe for a seafood lover on a chilly day. I made this per the recipe (cut down a bit for fewer servings) and was not dissappointed. It is a bit on the expensive side if you don't live near the coast, but well worth it for the unmatched flavor. It's super easy to make and very hearty and filling with tons of seafood - without an overly fishy flavor. I'll definately be making this one again!

This is a simple, classic party appetizer that will always be a big hit with your guests. The brown sugar in the recipe is perfect for cutting the tangy flavor of the BBQ sauce, making a rich flavorful sauce. This will be the only little smokies recipe I use at my parties from now on.

Cheesy Enchilada Stack

Not a bad replacement for your standard boxed taco dinner, but this recipe just still came up a bit short. The beef with enchilada sauce was a bit bland for my taste. I think I would add taco seasoning to the meat if I were to make this again. It seemed like this recipe really took large amounts of all the ingredients and was a bit difficult to prepare for the results. The results were decent, but I doubt I'll be making this again.
