Roasted Easter Ham

I needed a last-minute glaze recipe and this was fantastic! Three ingredients, so easy and simple to adjust to your taste. Make it tangy or sweeter by adjusting the ingredients. I brushed it on the freshly cooked ham and broiled it on low for just a few minutes until it was bubbly and sticky. Delicious! Thank you for sharing!

Grilled Lemon Herb Pork Chops

Love, love, love this recipe. The longer you marinate, the better it is. I think I did mine nearly two days and they were fabulous! Serve w/lemon orzo and brocolli. Delicious!

Cilantro-Lime Rice

This is the copycat cilantro-lime rice recipe found online and it's fabulous! I think sauteing the rice in the lime juice PRIOR to adding the liquid (either water or chicken stock) totally makes the dish pop. I get rave reviews every time I make this rice. Pairs great w/shrimp, chicken, jerk marinated pork. Awesome! Thanks for posting it!

Enchiladas Suizas

I LOVED this recipe! The green sauce was outstanding and so easy to make. This is definitely NOT a low-fat meal but substituting half/half or milk would be too thin for the recipe and make it soupy. Frying the tortillas really brings out the flavor, but they have to be just right. The trick is to fry them in HOT oil quickly and when you think they are nearly too done, they will be perfect once they are stacked and have a couple of minutes to steam in the paper towels before rolling. Thank you so much for sharing this excellent recipe!

Sarah's Rice Pilaf

If you normall buy chicken flavored, box rice/pasta mixture... you know, the SF treat?? Try this recipe. So easy and tastes just as good. If you want to trick the family, throw in a bit of dried parsley flakes to make it look like the boxed stuff. If you don't have orzo, substitute broken spaghetti pieces, about an inch long and saute it in butter before adding the rice and broth. Really, really good and the kids asked for more. Can't go wrong w/this recipe. Thanks for sharing it!

Mom's Best Pork Chops

Finally, a great go to recipe using ingredients you already have in the pantry! Crunchy outside, juicy and flavorful inside. Even my picky kids liked these! I used slightly thicker pork sirloin chops (that's what I had in the freezer) and, after browing them as directed, baked approximately 35 minutes. My husband, who prefers grilled pork chops, said he really liked these and I had to agree. For those who haven't tried putting the seasonings into the egg wash, I have to say you are missing out. The meat is more flavorful by seasoning the eggs as directed. Otherwise, you get an overseasoned crust with flavorless meat. Thanks, again, for such a wonderful & SIMPLE recipe.

Hamburger Steak with Onions and Gravy

Comfort food at it's easiest! Everyone in my family enjoyed this... even a picky 7-year old. From start to finish, including peeling & boiling potatoes to mash, this dinner was done in less than 30 minutes. Loved that I didn't have to make a last-minute trip to the store as all the ingredients were already in my pantry. I always wondered how my mom put together a yummy dinner when I couldn't see "anything" to eat in the fridge... this recipe is how. Definitely a keeper. Thank you for sharing!

Spicy Chicken Rice Soup

My kids cried out, "Oh my GOSH!! This is amazing!!" That coming from kids who only like chicken & stars from a can. Fantastic and simple and I had everything I needed without a trip to the store! I chose this when I had a head cold and couldn't taste much of anything. This was sooo flavorful, even my head cold couldn't stop it! The only change I made was to bring all ingredients to a boil before adding the rice. I do this when I make plain rice, too as it keeps the rice from being too sticky. Also waited to add cilantro just before serving b/c my kids don't like it and it keeps it's fresh flavor that way. Thanks for sharing.

Slow Cooker Teriyaki Pork Tenderloin

This recipe has a very good flavor. I love the convenience of the slow cooker, but I'm so close to giving up on using it anything but chili or stews because I don't like the texture of the meat when it's cooked this way. This recipe changed my mind for now. But, if you want the meat to turn out more like it was roasted in the oven, you should take care NOT to over cook it. I used a two pound pork loin roast and it would have been perfect after just 4 hours on low (I cooked it for nearly 6 hours on low). Also, I use the "smart pot" which I think cooks hotter than other slow cookers. Hope this helps anyone, like me, who was ready to ditch the slow cooker. Thanks for the tasty recipe.

Quick and Easy Brownies

I made these into brownie bites. Really yummy! Cakey outside, fudgy inside. Used 1 1/4 cups flour instead of 1 1/2. Baked in mini-muffin tin for 15 mins at 350 degrees. Perfect!

Taco Seasoning

As others have mentioned, this recipe is perfect with the addition of about 1/2t of salt. Although I love spicy food, my younger kids don't. This is not spicy as written and just right for them. The recipe says "36 servings" but I used the entire recipe the same way I would use one store-bought packet--about 1.5lbs of meat. Thanks for a healthier alternative to store-bought packets filled with "who knows what!"
