Banana Sour Cream Bread
This is the best banana bread recipe ever! Everyone raves about it and asks for some. I have been making this recipe for about 9 months now. I have only ever had one loaf fail. I use 3 8X4 inch bread pans and it fills them perfectly. I also measure out exactly 2 cups of bananas for the recipe and I cook the bread at 325 for about an hour and 15 minutes and it is perfect every time. I also add 1/4 teaspoon of all spice and 1/4 teaspoon of nutmeg to the recipe. I too find that I have to cover it for the last 15 min to avoid over browning the top. My only failure was the very first batch I made.I used larger loaf pans and tried cooking at 300 degrees per the recipe. I opened the oven at about 50 min to check on it and see it's progress and the loaves caved in. I learned from that mistake! Higher temp, smaller pans, consistency on amount bananas. Too little or too much banana can make a difference and 6 large bananas is pretty vague. 2 cups was the magic number! Sometimes it takes 6 bananas and sometimes 8 bananas to make 2 cups...

Chicken in Creamy Sun-Dried Tomato Sauce
My husband and kids love this recipe. I omit the artichokes and olives since nobody likes that. I add in 1/2 tsp of Cayenne pepper and a 9oz jar of sund dried tomato pesto. I Have even thrown in a jar of roasted red peppers. I serve it over elbow or rotini pasta. This is such and easy recipe to throw together and it tastes really great!
