Curried Brown Rice

I've been on a diet with no potatoes or wheat so I have been eating a lot of brown rice as a side dish. It's okay, but soooo bland. This recipe was wonderful and I actually can't wait to make it again. Very tasty. Made exactly as directed.

Tuna Fish Salad

Very tasty! Will make it again and again. I used 2 small cans of tuna and only measured the lemon juice. I eyeballed the celery and onion and just added until it was crunchy enough for us.

Baked Scallops

Very, very good! Cooking time is perfect. I added garlic to the melted butter and cooked for a minute or two to infuse the flavor. Used the larger frozen scallops. Thawed them in cold water and dried thoroughly. Then I rolled the scallops in the breading instead of putting the breading on top. Absolutely excellent. Perfect texture. Can't wait to make these again. Served with garlic and butter Pasta Roni.

Broiled Scallops

Very, very good! Melted butter in a sauce pan and added the garlic. Tossed scallops in it and then added them to all the dry ingredients which were in a large baggie. Tossed them until coated and placed in baking pan. Drizzled remaining butter over the top with a little lemon juice. Served over Pasta Roni garlic and butter noodles. Cooked at 400 for 20 minutes. Perfectly done. Would make again. Hubby really enjoyed.

Chicken and Snow Peas

This wasn't at all what I was expecting. The chicken and snow peas at the local Chinese takeout place has more of a white sauce. The ginger was very overpowering to me. I added other veggies like onions and sliced carrots but I followed the sauce directions exactly. If you really like ginger, this one's for you.

Lemon Chicken Piccata

I guess it was just not what I was expecting. Very tart at the end and I added salt, pepper and quite a bit of sugar to make it edible. The chicken was very good (I pounded them) and I served it with angel hair pasta with olive oil, parmasian cheese and parsley. We plan on using the chicken for chicken parmasian, but we won't be making the sauce again. Sorry. Obviously a lot of folks like this, but we won't be making again.

Boiled Potatoes with Chives

Just wanted to throw in my 2 cents. Yes, it is a very simple recipe, but for a new cook, even the simple things can be confusing at first. How long to boil some potatoes, how long to boil eggs, etc. And it is a great side dish that can be amped up with extra spices like onion or garlic powder or some parsley. A very useful recipe!

Chef John's Make-Ahead Turkey Gravy

I just finished making this. Last year I decided to try a new gravy recipe on Thanksgiving and for the first time ever, I had to toss everything and depend on jarred gravy. Not fun and most embarrassing!! Well, it took a few hours, but no rush since Thanksgiving is a couple weeks away. The only thing I changed was used 4 carrots and 4 celery stalks and used 8 cups of chicken stock and 2 cups of water per other reviewers. After simmering for the 3 hours, I only ended up with 4 cups of stock, not 6. I just added 2 more cups of water with 2 tsps. of chicken bouillon. It came out smooth as silk and my husband's eyes actually sparkled when he tasted it. He was very impressed and I think it beat every gravy we've made for 31 years of marriage. Hubby said it probably won't last until Thanksgiving. I plan on freezing it and thawing that day to save the craziness trying to make gravy with the entire family watching and waiting for dinner to be ready. I highly recommend trying this!!

Colored Sugar

Just made this because Publix didn't have orange colored sugar for Hershey's Kiss Peanut Butter cookies. Made about 2 cups and did have to add more food coloring (8 drops of red/12 drops of yellow to get the orange color). It is finer than colored sugar from the store but the money I just saved in gas and cost of the store bought sugar is worth it. I did use the baggie method and definitely will do again trying that Sugar in the Raw for bigger crystals. I should have tried this years ago! Thank you for the recipe!!

Oven Roasted Parmesan Potatoes

Tried it and loved it! I'm a potato nut and these are really great. Only change and it's just a personal preference, I peeled the potatoes and since they were kind of big, I cut into quarters. I just never cared for potato skins. But seriously, give these a try!!

Korean BBQ Beef (Pul-Kogi)

I have never been to a Korean restaurant, but if this is what the food is like, I'm going the first chance I get! This was delicious!! I made exactly as listed. It was wonderful and I ate it 3 days straight until it was gone! The hubby hates white rice and I hate brown rice so I made it with Beef Rice A Roni. It was a big hit. Southwest Chicken

Very Good! Added some things due to some folks saying it was bland. I made the chicken in the oven wrapped tightly in foil (350 for 50 min) with salt, pepper, onion powder, garlic powder, paprika, a little cayenne and a drizzle of olive oil. Always comes out juicy and tender for whatever recipe or just by itself. I cooked some chopped onion and green pepper in a pot until onion was translucent, added juice from the diced tomatos and then about 3 chopped garlice cloves. Once that cooked a bit, I added everything else and shredded the chicken with 2 forks and added that. It seemed kind of dry so I added about 1/2 a can of chicken broth (14.5 oz). We ate on soft tortillas with lettuce. I'm sure adding sour cream and cheese would put it over the top, but we are trying to get rid of those extra holiday pounds. My hubby was poking around in the pot and said, "You put beans in this??". I explained we are dieting and they are filling. He ended up having two helpings. I would definitely make again. Garlic Cheese Grits with Shrimp

My husband and I tried grits at breakfast last week for the first time. (Originally from IL, land of no grits...) They were a little bland, but good with salt and butter. Had them again at the next breakfast out and I decided to try this recipe since I had seen the dish on a cooking show about New Orleans. It was delicious!!!! Really, really great! I read the other reviews (from the Southern gals) and cooked the grits in chicken broth and added about a 1/2 cup of half and half at the end. Also used 1 cup of shredded cheddar instead of velvetta. This was to die for! It made the ones from the breakfast restaurant seem bad... It was creamy, cheesy and delicious! The hubby loved the tomato/garlic mixture the shrimp was cooked in and said that could go on one of his homemade pizzas as sauce. He kept hovering over the stove sniffing as I was cooking so I finally put him in charge of stirring. (If you can't get rid of them, put them to work!) We will definitely make this again. I'm using the leftover grits as a side dish to baked chicken tonight. Oh ~ I also added extra garlic to the shrimp mix (we love garlic) and will add an extra pinch or two of cayenne pepper next time. Basic Bean Soup

Great recipe! I have made it many times. It's a low-calorie lunch for me since I'm dieting and it does fill you up. Changes: I substituted 4 cans of beans instead of the dried ones. It speeds things along a lot!! (Rinse the beans off after dumping out of the can.) I also substituted chicken broth for water and added a couple of ham hocks for a smokier flavor. (I remove those after cooking.) It really is a great recipe as is and I would still give it 5 stars as written.

Zippy Summer Shrimp

Very good. Decreased hot pepper flakes from 1 tsp. to 1/4 tsp. (I'm a wimp...) and added 1/4 - 1/2 cup White wine per other folks suggestions. Served over pasta. Hubby loved it and actually remembered to take the leftovers to work today for lunch! Personally, I thought it was kind of hot, but too much black pepper is hot to me... I would make again.

Garlic Brussels Sprouts

I added some lemon juice and a little chopped onion to the pan. I also cut sprouts in half. I hate most veggies except corn and this was the first time trying brussel sprouts. I would eat these again ~ no problem!

Creamy Carrot Soup

I have made this a few times now. It's a very good soup! I have made it with milk or half & half instead of the heavy whipping cream and it still tastes wonderful to save a few calories. I highly recommend it!

Honey Mustard Grilled Chicken

Seriously ~ WOW! I was just looking to do something with chicken to put on a salad for the diet I'm on. I hate diet chicken/salad meals. I actually wanted a 2nd plate of this!! No changes to recipe except to double it. Now I have extra for tomorrow. This was excellent and I will definititely make again. I never seem to get around to rating recipes I like but I made it a point to rate this just after dinner. Try it! Thanks Connie.
