Chef John's Chicken and Mushrooms

Could not find boneless breasts with skin on, so used the bone in split breasts, and followed the rest of the recipe exactly. Just took a little while longer to cook. It was absolutely delicious, and the family loved it. I had one request from my daughter: to also use bone in thighs since she likes the dark meat better. This is definitely a keeper.

Bratwurst Potato Skillet

This was delicious. Followed other reviewers suggestions to sub mustard and worcestershire sauce and dijon mustard for the soy sauce and orange juice. Also used golden potatoes instead of red (only because they were on hand). My husband and daughter each took seconds.....no leftovers!!!!

Spicy Sausage and Rice Casserole

An absolutely wonderful dish..........but 1 TSP EACH BLACK AND CAYENNE PEPPER IS WAY TO MUCH!!!!!!!!. A dash of each is plenty. My family had a little trouble breathing when I made it following the proportions exactly.

Caramelized Baked Chicken

This was absolutely delicious and easy. I made exactly as posted, but basted every 10 minutes and baked an extra 10 minutes (I used drumsticks). The taste was outstanding, but the sauce was watery. We didn't mind, it was perfect as it was. To get the sticky sauce next time, I will try as others suggested and cook the sauce on top of the stove with corn starch added, before pouring on the chicken.

Cottage Cheese Roast

It was way too salty. I love Corn Flakes and cottage cheese, but they just didn't combine well for me in a baked loaf. It was worth the try though......simple to make, just was not to my taste.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Simply delicious. The only changes that I made were that I substituted olive oil for the butter, ground ginger for fresh and chicken stock for vegetable broth. All substitutions were made based only on what I had on hand. Thank you for sharing this recipe.....it's a keeper.

Easy Pesto

This was wonderful and easy. The only nut I had on hand was walnuts. I've never heard of anyone toasting walnuts......and didn't. The pesto was delicious. Thank you for sharing.

Cauliflower With a Kick

Banana Banana Bread

Delicious recipe. I didn't have enough bananas.......only 3 which made about 2 cups. Followed the rest of the recipe, but forgot to add the nuts. It tasted wonderful, was moist and was still very dense.

Winter Blossom's Often Requested Ham Salad

This is wonderful!!! I was looking for a good ham salad recipe to use with the leftovers from a spiral ham. Didn't have the dried minced onion in the house, so used onion powder and eyeballed the mayo to make sure it was the right consistancy. I was concerned about adding the dill pickle relish, but it added just the right zing. Thanks for sharing.

Black Bean Quesadillas

My supermarket sells black beans plain or with seasonings. I brought one can plain and one with the seasonings, used the rest of the ingredients as written and baked for 15 minutes in a 450 degree oven. We loved it. Thanks for sharing this recipe!!

Awesome Sausage, Apple and Cranberry Stuffing

Absolutely delicious. Used unseasoned pre-made bread cubes, Italian sweet sausage, and forgot the apple.....otherwise did not change the recipe. Next time will remember the apple!!!

Lasagna Alfredo

This was a really nice alternative from traditional lasagna. I made a few minor changes: added scallions and frozen chopped broccoli to the spinach mixture, used roasted garlic alfredo sauce, and like everyone else put a layer of the Alfredo sauce on the bottom of my pan before adding the no boil lasagna noodles.

Garlic and Onion Burgers

Absolutely delicious. Refrigerating the meat definitely strengthens the flavor. The burgers were moist and delicious. The only change that I made was to substitute monterey steak seasoning for the Italian seasoning. Thanks for sharing this recipe.

Sausage Pasta

A delicous week night dinner. Changes made only due to what was on hand: cut up chicken instead of sausage, a little bit of jar spaghetti sauce instead of diced tomatoes and a bag of fresh spinach instead of frozen. Will be even better with the spicy Italian sausage.
