Granola Bars III

I used apricots instead of raisins and slivered almonds rather than walnuts (same amounts). They came out perfectly (at 23 minutes) and were the best welcome gift for my new neighbour!

Honey Milk Tea - Hong Kong Style

Definitely too sweet, but a good jumping off point. I had 1 mug as per recipe, but modified my 2nd mug by skipping the honey, putting 3 teaspoons sweetened condensed milk rather than 4, and topping it off with 2% milk to make up for the creaminess the 4th teaspoon would have added.

Home Style Macaroni and Cheese

I made this tonight and it came together in no time! Super easy! I can't give it full marks because I didn't follow the directions to a "T". Many of the comments said that this recipe was bland, and having tasted with my additions I agree that it would have been, so instead of cheddar I used Black Diamond Shredded Italian Blend cheese, added an extra teaspoon of mustard, and added shredded fresh basil to the mix when I put it into the casserole dish. Also, the macaroni I was using didn't have ounces on the box and the conversion didn't make any sense to me so I just used 1 box of Catelli's Smart Macaroni (454g). The top didn't brown during the 20mins it was in the oven so I popped it under the broiler until it was the right colour. A rousing success! This one is going to be a regular!

Almond Cookies III

Absolutely fantastic! I doubled the almond extract because I really like almond flavour and it tasted just like marzipan! Very much a shortbread cookie. My only issue was that as the butter melted the cookies spread out and blended in to one another. Next time I might try using muffin tins to help keep their shape.

Sesame Green Beans

Really simple and great! I'm a veggie so I subbed veg stock. I also added a touch of soy sauce and some fresh grated ginger - yum! I left a little liquid at the end and tossed some noodles in it, which made a really great sauce. Next time I think I'll try adding tofu, garlic, and carrots to make a meal out of it :D

Black Bean and Salsa Soup

Holy cow this is good! My boyfriend can't get enough of it! This will be in regular rotation for sure. I took the advice of commenters and rinsed the beans to reduce the salt, kept one can of beans whole, added frozen corn, and topped with cheese, as well as the sour cream and green onions! I served it with tortilla chips :D

Chunky Tomato Potato Soup

I made this for dinner tonight. Delicious, cheap, easy! I followed the recipe pretty closely (but veg stock instead of chicken). The only real difference was that instead of dumping in Italian seasoning, I made up my own with oregano, basil, and cumin. Also, I put the spices in to cook with the onions as a way of jazzing up my old stale spices. I topped the soup with Black Diamond Italian blend shredded cheese and a spring or two of the leaves from the celery stalks. I served it with Black Pepper and Olive Oil Triscuits which added even more spice. My boyfriend and I both had seconds :D I might try simplifying it for cream of tomato soup sometime.

Addictive Sweet Potato Burritos

Holy cow are these ever delicious!!! And cheap! And easy! I swapped out kidney beans for black beans (personal preference) but that's the only thing I changed (for once). The seasoning sounds weird (soy sauce? mustard?) but totally makes sense in the final product. My boyfriend doesn't really like yams but he loved these! (also, divided recipe in half because 12 burritos is far too many for us two). Sweet and well-spiced!

Extreme Chocolate Cake

Wonderful! I didn't use the icing because I wanted to do something with whip cream and strawberries for Valentine's Day, but the cake itself is fantastic! It was so fudgey and delicious! Definitely needed the full baking time.

Baked Falafel

Amaaaazing! I followed the recipe to a T, except that I didn't have any coriander so I threw in a pinch of Clubhouse Chili powder. I served each patty in a pita with fresh mixed greens and herbs, sliced tomatoes, and mayonnaise.

Baked Tofu Bites

Very very good! I made it without the liquid smoke because I don't like that flavour. As is there was more than enough marinade to go around. I poured it on top of the tofu in the pan and re-basted the tofu mid-way. I recommend baking it on tinfoil for easy clean-up. Next time I'm adding fresh ginger!

Dipping Sauce

Followed the recipe exactly and it turned out amazing! I've used it as a dip for onion rings, a spread on French bread, mixed with broccoli slaw, and whipped into double-stuffed potatoes! This dip has endless uses!!!

Strawberry Oatmeal Breakfast Smoothie

This is crazy delicious. I made just one serving but kept the whole banana, doubled the vanilla, and omitted the sugar (on a diet). It has no right to be so simple yet taste this good. Perfect to take to work on busy mornings. May add yogurt in future to be more filling.
