Beer Bread I

Scrumptious, delectable!! I used 1 can of Stella Artois, added a pinch of salt, half a cup of finely chopped olives and chopped 10 pieces of sun dried tomatoes and a handful of shredded cheddar cheese. Mixed the flour, sugar and salt, added the cheese and then mixed with the beer. Mixed in the olives and tomatoes, put in the oven. Took 50 miutes to bake - drizzled butter 10 minutes before taking out as suggested by other reviewers. The crust was yummy.

Banana Nut and Ginger Bread

Chewy delicious bread. I cut down the sugar to just over 1 cup ; mashed 4 bananas and 1 Tsp of olive oil. The cloves have to be powdered very fine else it tastes very prominently in the bread. Used Guinness stout.

Caramel Popcorn

Delicious. Added this to my Xmas hamper contents this year. I used air popped plain popcorn and cut the ingredients in half. Lined the detachable wide base in my oven with wax paper and baked at 115 degree for 15 minutes. Remember to remove the unpopped kernals. Stir every 10 minutes to get the corns evenly coated.

Lemon Bundt Cake

Could not find lemon pudding so added lemon jelly powder to the lemon cake mix. In spite of adding only 1/3 cup of oil, the cake was moist. I also squeezed 1 lime & 1 lemon into the mix before baking.Very good cake - thanks for sharing.

Pumpkin Cake III

Moist and light cake. O used baked and pureed fresh pumpkins. I added only 1.5 cups of sugar and still found it way too sweet. good recipe - will make it again with less sugar and less oil.

Apple Strudel Muffins

The first time I made this muffin I changed the recipe quite a bit - 1 cup of bran & stone ground wheat flour instead of 2 cups of all purpose flour, and brown sugar instead of white sugar. The result was a mess. This time I followed the recipe to a T, except for adding 21/2 cups of chopped apple and adding 3 tsps of cinnamon for more flavour. The muffins were quite light but too dry. Won't make this again.

Apple Carrot Muffins

Mine came out an absolute disaster. But then, I changed the recipe quite a bit, so it was my fault :-( I added honey instead of sugar and apple sauce instead of oil, and all I got was a gooey mess, which I had to throw out. Next time, will avoid the honey and stick to sugar.

Mocha Chocolate Chip Banana Muffins

Absolutely fantastic! Instead of butter or margarine, I used 1 cup of apple sauce (home made by boiling 5 chopped medium sized apples in 3 Tsp of water and mashing it), and 4 level tsps of instant Nescafe coffee, dissolved in 3 tsp water, 3/4 cup of sugar. Didn't have choco chips, so left it out. Kept in my bread bin in the fridge overnight so that it wouldn't stick to the paper cups. The 23 cakes vanished in less than 2 days. I could fainlty smell coffee (in spite of 4 tsp added) but the taste didn't stand out. The second time, I used 6 medium sized bananas for more moisture, in the first batch, mixed the choco chips, but it melted in the mixture, didn't spoil the taste though. In the second batch, I sprinkled the chips on top. Oh yes, added 5 tsp of coffee this time for a stronger coffee taste. DELICIOUS.....

Favorite Old Fashioned Gingerbread

Easy to make and delicious cake. A sure keeper - and will be one of my Xmas cakes. I added 5 teaspoons of ginger for an really strong gingery taste.

Black Magic Cake

Wow! Never knew a chocolate cake that tasted so good, could be so easy to make. The amount of sugar needed was just right- I halved the suagr the first time and regretted it later. This is one of the cakes I will make for Christmas. Marsha, if you are the "Marsha" who posted the Cinnabon recipe, (folks, you MUST make those) thanks for some wonderful recipes.

Clone of a Cinnabon

Ooh la la. Delicious!! The cinnabons rose to the occasion (they doubled in size twice) and were SCRUMPTIOUS. I don't have a bread machine so used my mixie- but it didn't seem to make any difference. They were yummy. Followed the recipe to the T- there's no need to double the icing, I ended up with more than needed. I rolled the dough a little thinner and made 18 rolls instead of 12. If you use a clear plastic sheet lined counter, it will be less sticky when rolling the dough. Also placed the cinnabons to bake on a wire rack lined with wax paper (placed in the baking pan), as the first batch got overbrowned and hard when they were dirrectly put on the baking pan. The tip about using dental floss to cut the dough was very useful. For those of you who didn't get good results the first time, try again- like I did. My first attempt at making them was a disaster - my fault. I think the proportions I used were wrong. Thanks Marsha.
