Lasagna Roll Ups

I made this last night... only I got lazy and didn't feel like rolling each one... so I just made regular lasagna. I used those no-boil noodles, which also helped the process! Quick and Easy. The cheese filling tasted great! I didnt use tofu, instead just added 2 whisked eggs and it turned out fine. So the individual rolls I am sure would work/taste the same, just takes more effort! ha

Layered Chicken and Black Bean Enchilada Casserole

So easy to throw together at the last minute and looks so yummy! A comfort food/casserole. You can switch up the herbs you use if you done have cumin or coriander, no big deal. Next time, I will buy a rotisserie chicken instead of cooking chicken before (one less dish to clean!). But most of the ingredients you can keep on hand for a quick dinner when you do not feel like cooking!

Braised Balsamic Chicken

A yummy, easy, and quick week night meal that tastes like you've been cooking all day! The chicken is SO moist and flavorful. I ended up serving it on top of spaghetti noodles and adding Parmesan cheese to help the sauce stick to the noodles better. This would be perfect to cook for a date night because it looks so good on a plate! HIGHLY RECOMMEND, would give it 6 stars if that were an option!

Berry Delicious

Yummy, easy, quick, healthy, refreshing, great way to use up left over bananas! I just make a few batches and keep it in the fridge (since there is no ice in the recipe). Great for a quick breakfast in the morning if you are getting ready fast.

Hummus III

Definitely better than store-bought hummus. But, needs more oil & lemon juice, it is too thick if you stick to the recipe amounts. Also, added a little more garlic to one batch, but it turned out to be too much, so the 2 garlic cloves is perfect! Next time, I am going to roast the garlic first.

Spaghetti Sauce II

Pretty good! This sauce is really thick if you stick to the recipe. I kept adding equal parts wine & water through out the cook time. Next time, i'll brown the sausage in the pot and remove before adding the other ingredients, I thought doing this in a separate pan wasted a layer of flavor!

Onion Pasta

Made this last night because my husband had already eaten dinner and I wanted a simple fix. The longest part is cooking the onions, but it is still a simple recipe and worth the wait!! Instead of using 1 cup of water I used 1/2 c water and 1/2 c milk (didn't have any cream). This made it more creamy and rich. Even though my husband was already full from dinner.. he just HAD to have a bowl too! SO GOOD!
