Erik's Cheesy Cauliflower Casserole

Awesome! I steamed the cauliflower, instead of microwaving (maintains flavor and nutrients). Also sauteed celery, garlic, shallots, and 1/2 of a medium red onion in a bit of the bacon fat, a little butter, turmeric, crushed red pepper flakes, salt and pepper; then added this mix, once veggies were tender, to the cauliflower, and blended as instructed (also added a smidgen of buttermilk). Loved it, loved it! Celery added some nice texture to this dish. Cauliflower is my new best friend! Thanks, Erik!!

Crab Noodle Casserole

This was sooo awesome! I've made it several times now, and I love it! I added cayenne and lots of crushed red pepper, as I like it spicy! Highly recommend!

Avocado Salsa

Really delicious! I used canned, organic corn, and added chopped, organic chives and organic cilantro instead of the garlic and onions. I also added a chopped, fresh jalapeno and a chopped serrano pepper. I also added half of a squeezed lime. I also served 2% fat Greek yogurt with it, on the side, and dolloped on top of the tortilla chips loaded with the salsa! It was a big hit, and very easy to prepare! Recommend highly!

Hot Mexican Spinach Dip

Awesome!! I also added a can of heated refried beans, cayenne pepper, some red pepper flakes, sliced green olives, and a couple drizzles of olive oil. I also used hot pepper cheese instead of the plain monterey jack cheese (we obviously like it spicy!) I think a half cup of evaporated milk is sufficient. This was sooo goood!! Will make again... maybe will add some black beans and corn next time!

Popcorn Cauliflower

This was delicious! I prepared it a bit differently, however, based on my research of some other recipe websites. I used one head of organic cauliflower, cut into ping-pong sized pieces. Then, in a large bowl, I whisked together: olive oil (probably about 5 tbs), with a touch of garlic infused olive oil, and chile pepper infused olive oil; roughly a tsp of salt, some black pepper, garlic powder, and cayenne pepper (you could use whatever spices/herbs you prefer). Then, I tossed the cut and washed cauliflower(pat dry so oil/spice mix adheres properly) in the oil mixture (try to toss by moving the bowl in a circular motion, instead of using fingers, as this tended to break apart the cauliflower pieces) until everything was coated nicely. I baked this on a baking sheet covered with parchment paper for approx. 45 minutes at 415 degrees, tossing the cauliflower every 15 minutes with a spatula until they became golden-brown, and somewhat blackened on the tippy-tops.(In my opinion, you don't need the sugar or cooking spray). So yummy!!

Italian Bread I

This bread had a too-thick consistency, and was flavorless, despite adding extra organic, all-purpose seasoning and salt. I wouldn't make it again. I was very disappointed, because it smelled really good while baking, but, alas...
