Bangin' Smokey Beef Brisket

Tasty Meat Pie

I just made this recipe exactly as written. We loved it. Carrots had a little bite to them. I like them that way but husband would like them softer. If you want the carrots soft, bake 10 mins longer and don't forget to let it sit 15 minutes after baking. I feared it might be dry, but it was not. Will definitely make again

Old School Mac n' Cheese

Made this recipe exactly as written. Was delicious. We loved the topping. I was baking it from cold so added 20 mins on baking time. It got juat a little dry (but still delicious). Will be making it again at 35- 45 mins.

Best Oven Baked French Toast

My husband and I both enjoyed this. I too sliced an apple and placed it on the bottom of the pan. I had some leftover canned fruit and drained that and placed between the layers of bread. I even replaced 1/2 of the brown sugar with Splenda brown sugar. After baking and cooling it, I cut the pan into 8 servings and individually froze them and we just pull one out of the the freezer at a time and microwave it for breakfast. I look forward to trying it with other fruit.

Jacky's Fruit and Yogurt Muffins

This recipe is great for anyone trying to lose a few lbs. You can use lighter products like Dannon light n fit yogurt (any flavor) & change the fruit to match the yogurt flavor. Since Dannon yogurt is only 6 oz, I also added 4 tbsp 1% milk. They are delicious. I know I will be making this recipe over and over trying new flavors. This time I used light & fit strawberry yogurt and 1 c blueberries and one lg banana, chopped. Also used 1/2 c splenda and 1/2 cup sugar. Usually I will not rate a recipe if I have changed it, but I know if the lightened version is very good, the original version must be wonderful also.

Roasted Vegetables

Wonderful roasted vegetables. My husband doesn't eat eggplant, so I eliminated that and sprinkled vegs with grated parmesan cheese right out of the oven. Will make this many times again.

Apple Enchiladas

Just came from a mexican themed dinner and I took this for dessert. We all loved it...kind of tastes like apple dumplings, but less work. I even used lite apple pie filling and sugar free ice cream. Will make it again for sure.

A great way to use leftover turkey but....you either need to make 1 1/2- 2 times the sauce or use only only 1/2 the amouobt of pasta. Not enough sauce for 1 lb of pasta. Wonderful dish...i know I will make it again.

Baked Tilapia in Garlic and Olive Oil

This was good... but when you double the recipe...it ends up being VERY garlicky. I think if I make it again, I would not use quite as much garlic, especially if doubling the recipe.

Frosted Banana Bars

Excellent...excellent...excellent!! I made this recipe for the people I work with. I substituted 1/2 of the sugar in the cake with splenda and, like others....I made my own cream cheese icing so I could substitute some splenda in there too....no one who ate these suspected the substituted sugar. Received many raves and requests for the recipe. I'm sure I will be making this many times since it is a great way to use over-ripe bananas.
