Old Fashioned Strawberry Shortcake

EXCELLENT!! I needed to make this dairy free, so I used almond milk instead, and I prefer palm oil shortening instead of veg. shortening. I also wanted to serve this as a trifle, so I baked it in a 9x13 pan, cut cake into cubes and layered in the trifle dish with strawberries. I served the whipped cream on the side. I also really liked it topped with sour cream mixed with maple syrup, instead of whipped cream. Mmmmm. I just printed and added this to "my family's favorite recipe binder." Thanks for this recipe!

Soft Chocolate Cookies

Let me just say WOW!! I can't have dairy, so satisfying my choco-holic addiction has been a challenge. But this totally did it! I just made 1/2 batch to test out the recipe, and now I am bummed that I didn't make more ('cause 1/2 of these are gone and they're still warm). I used Earth Balance spread instead of butter, and I just can't bring myself to use margerine or shortening because of the trans fats and other bad stuff... So to all of you who can't have dairy, you have to try these!!! YUMMY!!! Will make these again... probably tomorrow :)

Bake Sale Lemon Bars

This was my first attempt at lemon bars. I followed the recipe exactly, and they are very tasty. Well, I shouldn't say "exactly." My oven bakes hot, so I always reduce the temp by 25 degrees anytime I bake. Also, my butter was frozen, so I melted it before mixing it with the flour and powdered sugar, and the crust turned out beautifully. I would not want to double the crust for this recipe. They were not too sweet. I gave it 4 stars instead of 5 because they were not as gooey as I expected a lemon bar to be.

Spinach Cheese Manicotti

This is the first time I have made a recipe without first reading the reviews, but that didn't hinder this dish from being delish!! I made a few changes: used oregano instead of parsely, used fresh baby spinach that I chopped, and added a little more garlic powder. Next time I would make a few changes. 1 jar of sauce with 1 cup of water would have been plenty!! In the future I will use more garlic, probably fresh minced, sautee the onions and mushrooms before stuffing, and use fresh basil. Excellent dish and rave reviews from my husband (who is a chef), my inlaws, and my kids!! I will make again. Thanks for the recipe!!

Fresh Pineapple Upside Down Cake

Excellent finished product!! I bake a lot, and always from scratch, but this was my first attempt at pineapple upside down cake. I followed the recipe exactly except I used a can of crushed pineapple, drained, instead of the fresh pineapple and juice. I LOVED the pineapple on top after the cake was finished. I baked it in a 9 or 10" iron skillet, and ended up with a great firm top and had no problem with runny pineapple glaze. I would do it the same next time, but I think I may add a little cinnamon to the dry ingredients. I gave it 5 stars because it really is a great cake, but I almost gave 4, just because I'm not fond of multiple step recipes. With 3 kids all wanting to help, it was easy to get lost in all the steps. This cake certainly satisfied my 2nd trimester cravings for pineapple upside down cake!

Walnut Brownies

I was a little skeptical at first, but this may be the best home made brownie I have ever tasted! I used cocoa powder instead of the carob, and I used 2 whole eggs. The result was rich, delicious, chewy, and fantastic!!

I substituted 1/2 whole wheat flour and used them to make individual strawberry shortcakes! My kids loved them!! This was my first time making scones. They were so much easier than I expected!
