Sweet Potato, Carrot, Apple, and Red Lentil Soup

Very good! I made as written and we all enjoyed it. Next time I will cook this in the crockpot on low for 6-8 hours and add 1 or 2 Tbs Garam Masala for some kick. A keeper!

Catherine's Pickled Blueberries

I made this as written only doubled - FANTASTIC! I would give it more stars if I could. For canning, I doubled the recipe and got 14 half pints. The syrup thickened up just fine in the fridge but turned into purely watery liquid after canning - did not thicken at all! Next time I will add a pouch of liquid pectin and make into jam after they stand for the required 8-12 hours. These will make great gifts with some local Goat cheese. The watery canned pints were mixed thoroughly with cream cheese and served that way. People loved it!

Catherine's Spicy Chicken Soup

Very, very good! I omitted the parsley, and tomato soup. Also substituted can of diced chili and tomato for plain diced and used one can of chili seasoned diced tomatoes. Used one can kidney beans. I omitted any sauteing of onions and just threw it all in the Crock-pot for 8 hrs on low. Added frozen corn for the last few minutes. Made my own tortilla strips too. Too hot for the kids but husband LOVED IT!

Curried Coconut Chicken

I followed the recipe exactly but found this to be too sweet and lacking something. Used a jar of yellow curry powder (Morton & Bassett) and cooked the curry as written. Maybe my curry powder was the problem.

Chicken Tikka Masala

This was good - and hot! I omitted salt as others indicated. I replaced the cumin, cinnamon, cayenne and black pepper in the sauce with 4 tsp Garam Masala. Marinated the chicken all day. I also doubled the sauce ingredients, omitted the jalapeno and added 2 tsp garam masala. I replaced the heavy cream with fat free 1/2 and 1/2 but found I needed to thicken the sauce with a bit of flour. Served over rice with some garlic nan for dipping. Better flavors the next day to boot! Thanks for sharing!

Thai-Style Peanut Sauce with Honey

This was very good! I reduced the rice vinegar to 1 Tablespoon as another reviewer recommended (I was using it right away). I served this with skinless chicken breasts, carrots and onions that I had cooked in some olive oil. All served over whole grain spaghetti. The kids gobbled it up! Thanks for the recipe!

Party Punch VI

We served this to 12 kids at our Halloween party and it didn't go over well at all. None of the kids went back for seconds. I made this using 100% real fruit juice punch so maybe that was the problem. Won't do this one again - sorry!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

This was very good. Followed other suggestions and baked at 300 for 70 minutes then basted on each side for 10 minutes longer each. Served with rice and was excellent. I will do this in the crockpot next time (cook for 6 hours on low in 1/2 inch of water with quartered onions then drain and add glaze for 45 minutes longer). Thanks for sharing!

Very good. I replaced the celery with frozen corn. Increased the broth to 2 cups and milk to 1 cup. Added 1 t. garlic powder also. It was gobbled up instantly!

Sausage Smothered in Red Cabbage

We really liked this! I made this all in one pan by cooking the onion in olive oil then adding the cabbage and other ingredients in step one. I then added the unpeeled apple for the last 15 minutes. I cut the salt in half as others suggested and used a few splashes of white wine vinegar. Lite Kielbasa also helped cut calories. We'll have this again!

Terrific Turkey Chili

We loved this chili! I browned the turkey, onions and peppers together (skipped the oil, oregano and pepper flakes) then poured it into a crockpot for 8 hours. I also added a can of black beans. Lastly, I added zucchini and frozen corn for the last 20 minutes. Top with salsa, cheese, sour cream and FRESH cilantro. To die for! Thanks for sharing!
