My cooking tragedies
Making a red potato casserole that required parboiling the potatoes.....I overcooked them so the casserole was mush. I can't grill a steak to save my soul. I once also forgot the eggs in a bundt cake. Looked fabulous, tasted horrible.

Easy Fried Eggplant
I only give this 3 stars because I feel that you really need to do a couple things differently. 1st you need to sweat the eggplant by sprinkling it with salt and letting it drain in a colander over the sink for at least 20 min. This improves the texture and flavor. 2nd use Italian seasoned Panko instead of plain breadcrumbs. Last, heat olive oil until it shimmers then add eggplant. Done this way, a plain recipe becomes great. My husband normally refused eggplant until I made this. It's a great appetizer served plain or with spaghetti sauce for dipping!

Purple Apple Slaw with Peanut Butter Dressing
I needed to find a use for red cabbage from my garden and happened upon this recipe. I made it and let the flavors develop overnight. I left out the apples as a personal preference. The flavor was very good! You could cut back on the soy sauce to 2T if you prefer a less salty flavor. Next time I make this I will make sure to cream my sauce very well before adding to the cabbage. Thanks for a great recipe!

Sweet Potato, Carrot, Apple, and Red Lentil Soup
Very good! I made as written and we all enjoyed it. Next time I will cook this in the crockpot on low for 6-8 hours and add 1 or 2 Tbs Garam Masala for some kick. A keeper!
