Peanut Butter Oatmeal Cookies
GREAT recipe, and a healthier alternative with the whole wheat flour and oats. I reduced the sugar to 1 2/3 cups and added one more egg (4 total) which made them more cake-like and less crumbly. I bake them 11 min. then press a Hershey's kiss into the middle of each cookie and bake an additional 2 min. Perfect! I've also added mini M&M's to the batter and baked them that way, and those were excellent too. The whole family loves them!

Skillet Meatloaf
I tried this tonight w/ a few alterations, and it was GREAT! I used spaghetti sauce instead of tomato soup and added 1 tsp. of Worcestershire. I shaped the meat mixture into patties, rather than loaves, and fried them for about 10 min. on each side. It was also quicker as I didn't have to wait for loaves to cook through. I served it with brown gravy rather than sauce and cheese. I'm not a big fan of meat in general, and my husband doesn't really like meat loaf, but we both liked this and had seconds!

Chicken Alfredo
This recipe was quick, easy, and delicious. The only changes I made were adding Italian seasoning and one chicken bouillon cube to the sauce. I think this added nice flavor. I also used angel hair pasta. I would also like to add some parmesan cheese the next time around for a little extra flavor in the sauce. I will definitely be using this recipe again!
