Oatmeal Peanut Butter Cookies

These cookies were amazing! They were chewy on the inside and crispy on the outside, and they didn't stick to the pan at all! I loved how the oats tasted and gave texture to the cookies! I did end up halving the recipe, but I still ended up with about 5 dozen teaspoonful sized cookies. Anyway, I also added about 3/4 of a cup of chocolate chips (maybe that is why I got so many more than the recipe said), and a half teaspoon of vanilla (because I LOVE vanilla!). I also cut back on the salt and only used half of what the recipe called for. These cookies are definitly a keeper! By the way, make sure NOT to overbake them, or else they will get really hard!

Raisin Coconut Treasure Cookies

These cookies are very good! My grandma and I make them for Christmas. Everyone always loves them! There is just a small problem, they sometimes get a bit hard if they are not eaten in a week or so, but they usually don't last that long!

Easy Pudding Cookies

First, I have to admit I changed these A LOT! I didn't have much flour so I made them chocolate OATMEAL cookies. I used 1 1/4 cup flour along with 2 1/2 cups oats. I used the same amount of margarine, sugar, eggs, baking soda, and pudding mix as called for in the recipe. Then I switched it up again on the white chocolate (because I didn't have any) and used 1 cup butterscotch chips instead. This recipe made about 65 cookies that were tablespoon sized and I baked them at 350 degrees for 11 minutes. They are fantastic! They are chewy on the inside and crisp on the outside! My mom (who is not a huge fan of sweets) could not stop herself from eating them! They are pretty sweet, but that is what cookies are supposed to be. I am also impressed that they don't break apart; they are very sturdy and good for travel. To me, they have the perfect amount of chocolate flavor. I will continue to make them again and again. Also, be sure to bake them on parchment paper lined baking sheets, because they are a bit sticky, and then leave them on the baking sheet for a minute before transfering them to the cooling racks, it will be easier and they won't get scrunched and lopsided. You will be happy you made these!

Easy Oatmeal Muffins

These muffins were pretty good. They are definitely a bit plain and not super sweet, but that was what I was looking for! They are very moist and fairly healthy, and have a good texture. I ended up adding some flax seed meal to the batter, and they were great! I ate them warm from the oven with some butter and honey on top. Delicious!

Peanut Butter Frosting

For my taste this was FANTASTIC!!! I have to admit the peanut butter flavor was mild, but it was sooooooo good! I had to fight my parents to lick the spoon and beaters after making it! This tastes AMAZING on chocolate cake or on chocolate cupcakes, like I made. It is sweet, but that is what frosting is, right? I didn't change the recipe at all except for the amount of cream. I added a few tablespoons more than the recipe calls for because my frosting was too stiff to spread. This recipe makes a thick, yet somehow fluffy, creamy, lightly peanut butter flavored, delicious frosting! By the way, I used JIF creamy peanut butter and heavy whipping cream.

Coconut Cream Cake II

This cake was good, my family absolutely loved it and could not stop eating it (including my dad who rarely eats sweets unless he thinks they are "worth it" to him). I, on the otherhand, thought it was good, but it was a bit sweet for my taste. I couldn't eat very much of it before I felt a little sick. Overall though, I'd say it was good. It was extremely moist and had a good flavor. I aslo baked it as stated in a 9 by 13 inch pan, but baked it a few minutes longer than called for. Good recipe and VERY easy!

One Bowl Chocolate Cake III

The taste of this cake is 5 stars, but the texture is a 3, so I averaged them out, making the overall rating 4 stars. I may have done something wrong, but I did follow the directions exactly and my cake stuck to the pan (even though I did grease and flour it). Also, the cake was very crumbly and almost too moist, and almost overflowed out of my 2 9 in. pans. Next time i may try reducing the amount of water, or add none at all, because the taste was absolutely devine! I will definitly make this again with minor changes. Thanks for the recipe! UPDATE: I made this recipe again as cupcakes and they are sooo good! They are very rich and extremely moist. They are light and wonderfull! IMPORTANT:Just be sure if you make cupcakes you only fill the tins HALF FULL or else they will overflow (like mine did the first batch). I baked them for 25 minutes per batch and I was able to yield 30 cupcakes from this recipe. Also, they are divine with peanut butter frosting form this sight :)

Pumpkin Cream Cheese Muffins

While these muffins tasted very very yummy, they were not what I expected. The cream cheese "filling" was more like a cream cheese, custardy topping, and the amount of struesel was not enough for all the muffins I got out of the batter (which was about 24, not 18). Next time, I will probably double the streusel. Although i would make some changes to the muffins, they were VERY good. I made them for a friend for her birthday and she said that between her and her family, they were gone in a day! These muffins are also extremely moist and have a nice pumpkin flavor. I will definitely be making these again(with my minor changes) in the fall perhaps for gifts during the holidays!

Quick Coconut Cream Pie

This pie was very good! I increased the coconut to 1 cup to get more coconut flavor, and i used 2-4 serving size pakages of instant pudding. It went very fast at dessert time! I might try it with coconut pudding or 1 package of coconut and 1 package of vanilla next time.

Oatmeal Date Bars

These are very good, but I would modify them a bit. Next time I'd add no sugar to filling, and decrease sugar in topping to 3/4 cup. Then, I'd add some cinnamon to the topping, because that would be nice. These are very very good though. My mom LOVES them!

Pumpkin Dessert

This was really good as is BUT I modified the recipe to the tastes of my family. I left the crust the same, but in the filling I decreased the sugar to 5/16 cup (which turns out to be 5 tablespoons OR 1/4 plus 1 tablespoon) and left everything else the same. In the topping I used margarine instead of butter, only 1/4 cup of sugar, 2 teaspoons of cinnamon, and no nuts. We thought the modified version was better because it was still rich, but not overly rich. This makes a lot! We had 6 people at thanksgiving and we only ate about 1/4 of the cake! I would recommend this, but perhaps thinks about modifying the sugar so that it isn't soooooo rich! I didn't think it was bland at all. It had the perfect amount of spice for me. I will continue to make this!
