For the last 6 months I have been learning to cook very low fat or no fat vegetarian to take care of my best friend’s 14 daughter, Annika, that has LCHAD. This is a whole new way of thinking and cooking, since I can only use coconut oil and walnut oil and the amounts are not only limited but mandatory.
The down side is she does not like cooked mushrooms which have a lot of protein and no calories and a lot of the flavors are new to her so sometimes she does not eat very well. Then because of her condition, she gets stomach aches when she eats, so I have to make her food as dense as possible in nutrition.
The benefits have been amazing! Annika, who was use to ending up in the hospital about every other month because of her condition and lack of information on what she really should not be eating, has only been in once in 6 months and that wasn’t related to what she eats at all. My cholesterol has dropped 20 points, I have lost 30 pounds and I look years younger!
