To Die For Blueberry Muffins

Although my family and I unanimously decided that these weren't really "to die for", we did all agree that we loved them and they are absolutely delicious! They were moist with great flavor. I was a little lazy and didn't do the crumb topping mixture, but instead just topped each by sprinkling some cinnamon and sugar on them. They turned out great! I agree with some of the other reviewers that this would probably make a great base for any berry muffin. They may actually be "to die for" with the topping, I'll definitely take the time to add it next time. Regardless, they were still five star to me!

Alcohol-Free Mint Julep

These were such a fun and yummy alternative to be able to serve kids during the Kentucky Derby. And the simple syrup with the mint infused, AWESOME!! Why didn't I ever think of that?!?! I will forever be using mint infused simple syrup in my mojitos as well from now on. Knocked it out of the park with this recipe!!

Easy Pesto

I love basil and was looking for a good solid recipe to be able to make and freeze pesto to use up my herbs. I was really quite happy with this one except that the garlic was really overpowering...and I love garlic. I like that it used almonds as well, great thrifty alternative to other nuts. I'll definitely be using this recipe as a base for the future, but tweaking slightly to suit my tastes. Excellent and easy recipe!!

Prosciutto-Wrapped Chicken Breasts with Herbed Goat Cheese

I know it's never fair to rate a recipe based on changes that are made, but I'm going to anyway! This was so delicious and the chicken was so tender and juicy! I halved the recipe for a dinner for two for hubby and I. I used all dried herbs since garden season in Ohio hasn't started yet. I didn't have dates on hand but instead used a good handful of craisons that I chopped up very fine...wow the craisons gave the herbed goat cheese mixture and incredible flavor! I wrapped them in turkey bacon instead of prosciutto because prosciutto is difficult to find around here and expensive when it is found. I served it with a strawberry and feta salad, also from this site and the end result was fabulous!! My husband begged me to make it again!

Chili-Lime Chicken Kabobs

I really liked the marinade in these kabobs! I made two batches of the marinde and used one for the meat and the other for the veggies. As others had stated, I increased to the juice of two limes for the marinade and I thought it was perfect! I alo skewered both chicken and shrimp. What a hit!

Cajun Style Baked Sweet Potato

Thes got gobbled up at my house! I was looking for a way to get my family to eat sweet potatoes and came across this recipe. I cubed the potatoes in small pieces, and added spices and olive oil to a gallon size bag along with poatoes and mixed well. This coated them all evenly. Spread them on a baking sheet and cooked for about 45 mins, then broiled for about 5 mins to make them crispy on the outside. To serve, I mixed some stone ground mustard with honey as a sauce and let my family pour it over their potatoes at the table. This was a winner!

Buffalo Chicken Dip

Great Recipe!! The first time we made this at my house, we made the recipe as directed except for boiling and shredding 2-3 chicken breasts, and it was awesome! My hubby usually makes this one!! It has been tweaked a different way every time we make it, ever since our first time. We will sometime use blue-cheese dressing in place of the ranch, and crumbled blue cheese instead of cheddar, or any combination of those...they are all yummy! The only time I had a complaint about any tweaks we've tried was when we tried Frank's Red Hot Wing Sauce in it. It ended up too greasy. It seems better to stick to the regular Frank's Red Hot and not the actual Wing Sauce, other than that, I suggest this recipe exactly as it is, or trying other slight variations...you really can't go wrong with it!!

Angela's Awesome Enchiladas

These were absolutely fabulous! I cooked the chicken in a crockpot in order to save a few steps. I used two large frozen restaurant style chicken breasts that I purchased in bulk at the warehouse store. Cut them in half, and they were still partially frozen when I placed them in a crockpot in the morning. I added the taco seasoning, onion powder, garlic powder, and chopped onions to the crockpot along with 3 TBS of lime juice. That may be a little too much lime flavor for some people, but either way, I've found that 3 TBS is all the amount of liquid that is needed to be added to the crockpot in the morning. By afternoon, there is the perfect amount of flavorful juices in the crockpot for the chicken to soak up once it is shredded and placed back into the crockpot. I then followed the recipe instructions for assembling the enchiladas and sauce. The only other substitution I made was to use a packaged Mexican 4-cheese blend instead just the cheddar cheese. I will definitely make these again! This is a great alternative to the much more difficult to prepare beef enchilada recipe that I had previously been using, but my family always requests. Thanks so much! Oh, I almost forgot to add that I used 8 inch tortilla shells instead of the 12 inch that the recipe called for and I got 10 enchiladas out of this recipe! Definitely a bonus! :)

Scalloped Corn

This recipe turns canned corn into comfort food! I've tried several different recipes similar to this and am very please with the texture in this one. I wasn't sure if I should drain the corn or not so I decided to go in the middle and put 1/2 of the corn liquid into the mixture. It gave a very moist consistency without being mushy. This goes great with holiday meals, and tonight I paired it with "My Kids Favorite Pork Chops" recipe also from this site and it made a delicous meal!

My Kid's Favorite Pork Chops

This was a hit at my house! The pork chops came out nice and tender. I used ingredients that I had on hand including red onions, Bud Light and Sweet Baby Ray's Raspberry Chipotle Barbecue Sauce. The barbecue sauce turned out to be perfect for this meal since pork always blends well with fruit flavors and the hint of chipotle gave it a tiny bit of a kick that made my family happy! I can imagine that using a diiferent barbecue sauce would completely change the flavor in this. I will definitely be making this again.

Boilermaker Tailgate Chili

Oh my goodness! This was the best chili I've ever had. I'm rating it based on some of the alterations that others had suggested, and what I had used based on availability. But wow! This is so easy to tweak to your own personal tastes. I used 1 lb of Bob Evan's Zesty sausage instead of the italian sausage, kept the ground chuck the same, increased the amount of beer as others stated, only used one can of chili beans because no one in my house is a big fan of heavily beaned chili, and didn't use red or green peppers because I'm not a big fan of them and didn't have any but the Zesty Sausage already has a pretty decent kick to it anyway...YUM! This chili is so hearty and delicious and just explodes with flavor! I will be using this recipe over and over again.

Easy Rum Cake

I've been making this cake for several years now and I am rating it 5 stars as written. It's always a hit in my house! I usually use Appleton Rum that I've purchased in the Carribean or at the Duty Free store while visiting Canada. A couple of other fun twists are to change the pudding flavor, to whatever you might dare to try. Chocolate pudding is good in it, and another of our favorites is to use bananna pudding and a coconut falvored rum! That one gives it a slightly tropical flavor. Love this recipe! It's super easy!
