I had to retire because of a Chronic Back/Nerve Injury, I hate it!! I'm married, no kids! YaY! 2 dogs, 1 cat, and 2 Budgies that bite!
My favorite things to cook
I love to spend the day making homemade Pasta/Ravioli, and then slow cooking a fabulous tomatoe sauce, then putting the two together, serving it with a colorful salad,fresh garlic toast and watch it all disappear in less 15 minutes!
My favorite family cooking traditions
We once were pretty broke at Thanksgiving,only having 1 lb of ground beef to make a fabulous dinner,I added breadcrumbs and spices and molded the meat into a Turkey, even stuffing it. I made a gravy from the drippings and served it with piped potatoes and carrots in the shape of 4 leaf clovers! I got rave reviews from my 2 other diners!!
My cooking triumphs
In the town I come from we have "Bath Tub Races" every July, it's a 4 day weekend Party, Sunday morning is the race, I worked at a sea side restaurant and had 100 people booked for brunch at 11am. The Boss never showed up to open the restaurant until 10:30am, my co-worker and I had 1/2hr to prep and make the 100 servings of brunch...We did it! with no help from anyone! We were proud of ourselves that day! and pretty pissed off at the boss!
My cooking tragedies
I love to experiment,I had gone a dairy free diet for a while once, and I decided to give "Creme Caramel" a try with Soy milk, I ended up making a very large batch of it, I loved it, but not enough to eat it all, my husband almost threw up when he tried it(he's very fussy and hates soya)So I gave it to the lady next door who had 2 hungry growing kids, well 2 days went by and she brought back the whole bowl full that I gave her, telling me "sorry" they didn't like it, take it back! I was floored, at least she could of just flushed it, and lied! but no, she brought it back and rubbed my face in it! Ouch! it hurt! I never made it again!

Whole Grain Waffles
I tweaked the recipe a bit, switched the Whole Wheat-Flour with All Purpose Unbleached White, used Oat Bran instead of Wheat Germ, then made them non dairy by using Oat Milk. It was my first time making my own Waffles at home and the first time hubby has had them,he Loved them! and so did I!

Better Than Pumpkin Pie
I've made "Pumpkin Pie" before,secretly substituting the pumpkin with Butter-Nut and was told it was my best "Pumpkin Pie" ever! So I give it 5 Stars!!

Mild Cheesy Chicken Enchiladas
This is good but would be much better if you sauteed some green peppers and onion's, then add salsa (mild), you can even throw a can of refried beans into the mix, then add your tomatoes and cheese when you roll them up Don't forget to add more cheese on the top as your putting them in the oven! Before you dish them out, have some veggies like lettuce\spinach chopped thin for the Enchiladas to sit on then let everyone put on their favorite toppings like cheese, sour cream, more green onions and tomatoes and olives!
