Twice Baked Sweet Potatoes
W O W...!!!! These are eye rolling GREAT!!! After I scooped out the "pulp" I deep fried the skins for about 30 seconds or so and then followed recipe exactly. I made these at Thanksgiving and nobody wanted to move on to the next dish. All the people that said the weren't big fans of yams LOVED them!!!

Scallop-Topped Portabello Mushrooms
This was eye rolling, groaning good!! It is definately a must try! I think this rates 8 stars. The sauce tastes just like the sauce they serve over the mussels at my favorite Chinese restaurant. The family REALLY loved it! Thanks for the recipe! * * I'm thinking next time I'll use baby bellas and put one big sea scallop atop each mushroom, like appetizers ;)
