American Potato Salad

I am not a big fan of mayo plus my Doc told me to stay away from it, so we made a small modification to the recipe. We used 1/2 cup of mayo and 1 1/2 cups of fat free greek joghurt, other than that we stuck right to the recipe and it was very good.

Country Style Fried Potatoes

excelent recipe. I will offer this tip, if you want really super results cube your potatoes, place them in a container and fill with water, place in frig for a couple of hours (The potatoes must be very cold) then procede to fry them as stated in recipe. I prefer bacon grease to fry the potatoes but that's my own taste.

Breakfast Zinger Juice

Followed the recipe to the letter with one slight change. I add 1 1/2 Oz of Vodka or Gin. What a way to start the day, by the way I leave the vodka/gin out of the kids drinks.

Bobbe's Super Cheesy Pasta

This was great, I only did one thing different. I added 1/2 bottle of red wine into the cook, made the time go faster while this delicious dish was being prepared. Wonderful, thanks for sharing.

Baby Spinach Omelet

I have been making spinach omelets for a good while. I start with one strip of thick cut bacon chopped in small pieces, sautee until brown remove from skillet, wipe oil from skilet leaving just enough to sautee the diced onion. Then just as with this recipe, mix all ingredients in a bowl. Pour in to skillet cook for 2 minutes flip and cook for 2 more minutes, I like my omelets moist. Great recipe but for me an egg without bacon in just plain naked.

Perfect Crab-Stuffed Mushrooms

I loved this, really delicious. I did make a small change, I added 5 cloves of garlic finely chopped, added during step 2. These were earth shaking, my gourmet club loved them also. The first time I made them I ate one before the club assembled and it's a good thing because I would not have gotten even one after the gang got finished. The next meeting I was ordered to make them again, this time I made a triple batch, they all vanished. Thanks for sharing

Irish Eggs

My wife and I eat a similar dish at least once a week, sometime for breakfast and also dinner. I use bacon, cooked first. Remove bacon from frying pan leave the grease, add potatoes and mixed peppers frying until lightly browned. Add the bacon back in, I use 2 eggs per person, well beaten. For fluffier eggs add a dollop of sour cream to the eggs and beat well. Making sure the frying pan is not to hot, add the eggs and fold them into the mixture in the frying pan, continue folding eggs until cooked but don't over cook them they should be moist. Serve hot.

I tried this recipe and unfortunately did not like it. I must qualify this by saying I am not a liker of sweet anything, further I can not eat store bought ketchup it is to sweet.

Oven Roasted Teriyaki Chicken

This is great and fast to prepare. I followed the recipe with one exception. I added 1/4 cup of dark rum simply because I like the taste of rum with baked chicken, delicious. I also tried it without the rum, not as tasteful as with the rum. Thanks for sharing.

Broccoli Cornbread

Mom's Quick Pasta Sauce

I have been making a sauce similar to this for many years, but this was excellent. I added one thing, 3 or 4 oz. of hard salami chopped very fine, it adds an interesting flavor to an already very good sauce.

Potato Skillet

We have been doing this for years and we still love it. For some interesting variations: Bratwurst patties chopped fine and fried adds a interesting taste. We also dice bell peppers (all colors) fry these right after the bratwurst patties or bacon. I never cook with salt, pepper and all other spices yes, if someone wants salt they can add it before they eat. My wife adds a pinch of chicken bullion while cooking the potatoes.

Old Fashioned Mac and Cheese

This recipe has been around awhile but it remains a great one. I enjoy using different types of cheese just to change the flavor a little. I leave out the salt and pepper, but that's my personal taste. For a south of the border experience I some times use some of my homemade jalapeno salsa. That really spices things up and adds a little color to the dish. By the way, if someone wants salt and pepper they can add it before eating, there is a ton of salt in the cheese.
