About this Cook
I'm a lady who loves to cook for my husband and family. Due to some health problems, I do not work at the moment, so I have a bit of free time to further create in the kitchen. :) Even though I've been a member for some time now, loving all of the wonderful recipes on here that everyone submits, my cooking interests have now changed. I can't eat gluten or dairy- so I'll be searching for healthy recipes in that department. I also hope to be uploading my own soon in time...hopefully to help others with their GF life.
My favorite things to cook
Honestly, ANYTHING that will put a smile on someone's face! I love to try new dishes to expand the dinner menu. BUT I think my favorite thing to do in the kitchen is BAKE. :D I started out with cookies-moved on to cakes-and I am now experimenting with pies! Love it! It's my stress reliever. The only thing is, now I'll be experimenting with gluten free recipes. Gotta keep hubby happy! ;)
My favorite family cooking traditions
I don't think we really have any other than the usual Holiday feasts. I do have to say though, both of my grandmothers really can/could cook! I learned a lot from the both of them-as well as my mother. :)
My cooking triumphs
Hmmm...I think the first time I cooked a turkey! Lol, it made me nervous, but it came out juicy! :DDDD
My cooking tragedies
Oh my gosh, when I made a recipe that I make a million times, for my cousin who had requested it. I think I was super tired cause my hand was a little heavy on the seasoning. I made it too SALTY! AHHH, I couldn't even eat it! And bless his soul, he still kept giving me compliments!

Black Bean Vegetable Soup
I had just made some black beans and this recipe popped into my inbox at the perfect timing! Now, I didn't have stewed tomatoes or canned corn- so I used 3 small sweet corn on the cobs, and then I pureed two fresh tomatoes with the beans. I also added celery(didn't have green bell pepper, but that would have been really good in it too!). As for the beans- two cups pureed, and two cups in the pot. I had to add an extra two cups of broth as well for a total of 6 cups. I know some people reduced the broth, but I always add more veggies than the recipe calls for. Like, there's no way I can just put 1 clove of garlic lol or two carrots. The only thing I really did change, was I added a little bit of smoked paprika. This soup really hit the spot! And it's an easy recipe that you can really change around to your liking. Thank you DeeDee!!

Sweet Corn Bread
This turned out great! Made just as is, and I love the flavor-sweet, but not TOO sweet-just right. And the texture was perfect! A great compliment to my homemade chili. Definitely a keeper! The only precaution is definitely do not over mix.

Old-Fashioned Pancakes
I really like this recipe!! So easy, and they turn out perfect! Some of the other pancake recipes I've tried in the past are too complicated, and on a weekend morning, I just want pancakes that are yummy, quick on time, and don't come from a package! Would definitely recommend giving this recipe a shot! I've made them once with chocolate chips, and once with bananas too! Mmmm!
