Overnight Cinnamon Rolls I

Very nice recipe. I added softened butter to the filling and the rolls only needed 20 minutes of baking time, but otherwise followed the recipe as written. The rolls were light, fluffy and absolutely delicious. I used two baking dishes, 9x13 and 8x8, to give the rolls plenty of room and they needed it! Next time I'll add a little extra filling.

Chickpea Salad with Red Onion and Tomato

Light, refreshing, easy and tasty. Perfect weekday dinner side dish. Used oregano instead of parsley, and added a splash of red wine vinegar. Nice way to use the Roma tomatoes from my garden. Make it early in the day and let it in nap in the fridge, the flavors are really nice when given time to mingle.

Amazing Italian Lemon Butter Chicken

Yum! Lemon, butter, cream, artichoke hearts...how can you go wrong? Those are a few of my favorite things! Used leftover roast chicken that had been sitting in the fridge. instead of frying, also cut back the butter a bit when making the sauce. Served with a fresh loaf of no-knead bread. Very tasty!

Baked Potato Soup

Creamy, comforting, delicious. Opted to use thyme instead of basil, added some sour cream to the half & half. Will be making a lot of this over the fall and winter months.

French Onion Soup Gratinee

Delicious and makes the house smell heavenly. Allowed the onions to carmelize all afternoon over low heat. Made a couple changes due to what I had on hand...4 yellow onions, omitted bay and parsley, added several sprigs of fresh thyme, soy sauce instead of balsamic. Wonderful fall comfort food.

Mini Mexican Quiches

Best Marinara Sauce Yet

Mom's Cucumber Salad

Wonderful summer salad that uses up all the cucumbers making their way out of the garden. Light, fresh and easy. I followed suggestions of others and salted/drained the cucumbers prior to dressing. I also adjusted amounts to 1/2 cup mayo, 4 teaspoons sugar, used apple cider vinegar and added freshly ground pepper.

Soft Oatmeal Cookies

Wonderful recipe! There is no need to flatten them with a fork, unless you prefer a flatter/crispier cookie. My favorite way to make them is with a cup of butterscotch chips added, and then taking them out of the oven a bit early for soft, chewy deliciousness. Nom, nom, nom.

Hot Bacon Dressing

Absolutely perfect for the massive amounts of spinach coming out of my garden this time of year. My husband calls it "candied spinach". We like the sweetness so we make the recipe as is, but the amount of sugar could easily be reduced. The recipe yields a generous amount that is easily reheated for a few minutes over low heat. Yummy!

Sensational Strawberry Shortcake

I had the most beautiful strawberries from the garden which prompted a shortcake craving. This was perfect. I was careful to handle the batter minimally and gently, and only baked for 30 minutes. The cake was perfectly tender, and the meringue topping gave a sweet crunch that was fabulous.

Oven Fried Chicken II

Made this with skinless boneless chicken thighs. Followed the suggestion of others and baked on a rack. Changes: dotted the top of thighs with butter before baking, added hot sauce to the egg wash. Chicken was delicious and moist with a crispy coating.
