About this Cook
I live on a cattle ranch in northern BC. I am a grandmother and love my grandchildren to bits. One grandson and 10 step-grandchildren. I have a Himalayan cat named KoKo and a little green budgie named Daisy. Life is good here on the farm.
My favorite things to cook
I love down home traditional easy cooking. My husband loves his meat and potatoes as he works very hard. We raise our own beef so that is a staple meat in our home. I also enjoy baking cookies, bars, squares, puddings, etc. I use my slow cooker frequently and always looking for new and interesting recipes. I also like to try new things and enjoy Greek, Italian and other Meditterean dishes. I try to cook healthy as well as filling.
My favorite family cooking traditions
My background is Russian/German while my husband is British. I enjoy dishes that are basic yet hearty.
My cooking triumphs
As I am quite traditional with my cooking, I would say that my best meals are special occasions. I love to have dinner parties and like to set the atmosphere to be fun and casual. Lots of food and people. I like to decorate and have things set out that is pleasing to the eye and appetizing.
My cooking tragedies
My worst tradgedy was when I was a young bride and had invited my in laws over for fried chicken dinner. I cut the chicken up into pieces and carefully breaded them and proceeded to fry it in my brand new electric skillet. I put potatoes on to boil in my shiny new pot as well as some kind of vegetable. I had previously baked a scratch cake for dessert and had it cooling on the counter. I could smell something terrible coming from the kitchen. The potatoes had boiled dry and had stuck to the bottom of my brand new pot. I served the chicken without the spuds. The chicken was crisp and golden and looked very tasty. However, no one could get their fork or knife into it never mind trying to chew it! It turned out I had bought a tough old stewing hen that needed to be cooked quite differently. Some way to impress my new in laws! The cake was OK although it was a little doughy in the middle. We all had a good laugh and went out for dinner that night. I was mortified by the experien

Chicken Salad with Bacon, Lettuce, and Tomato
Great recipe! Try using breaded chicken finger strips - this is very good. Omit the avacado and serve over lettuce leaves. Also, try a honey mustard dressing - super yummy.
