Garlic Chicken with Orzo Noodles

So easy and so yummy! I cooked the orzo in chicken stock and didn't drainit completely. The kids even gobbled it up!

Chef John's Mushroom Gravy

Always love Chef John's recipes! Followed the recipe to a T and it came out perfectly. I browned some meatballs first separately and then added them to the gravy for the last 10 or 15 minutes to cook them through. Served with Chef John's Perfect Mashed Potatoes and steamed broccoli. They whole family cleaned their plates, including the picky 5 and 7 yr olds!

Black-Eyed Pea Soup

This is the third year I've made this soup for New Year's Day. My mom always told me black-eyed peas were good luck for the new year. :) This year's batch was the best ever. My 6 yr old even gobbled hers up in record time. Having heard that canned tomatoes are killing us (like most everything else we eat these days), I bought a box of chopped tomatoes. They came out more like a chunky sauce than diced tomatoes, but I guess that was just what the recipe needed because it was delicious. I froze half and still have enough for lunch for the next couple of days for me and my family. Looking forward to lunch today for sure!! :) (Note: I still used Ro-Tel. A southern girl can't live without her Ro-Tel.)

Strawberry Vanilla Pancakes

Mmmmm... I used whole grain white flour, added one more T sugar and only did 1/2 t salt per previous reviews. The batter did seem thin, but they fluffed up so nicely!

Mini Rotini with Carrots and Peas

When the hubby's out of town I like to make something quick and easy that I know my 5 and 7 yr olds will eat with minimal complaints. This was a hit! I'm not a huge fan of peas myself, but they really work in this dish. Surprisingly, I actually had leeks on hand, so I pretty much followed the recipe except that I used Barilla PLUS elbows and I added garlic salt instead of regular salt and pepper (per another reviewer). Yea! Quick and easy, this will definitely go in our rotation!

Taco Seasoning I

Love love love! I'm doing my best to avoid processed foods and foods with additional preservatives so I thought I've give this a whirl. I've made this a few times and my only recommendation would be to make MORE so you can have some on hand to throw into other recipes in the future! I've used it in tacos of course, but I've also mixed it in sour cream for a quick dip for quesadillas, put a pinch in ranch for a Mexican dressing to go with a salad... the possibilities are endless now that I'm not tied to the old seasoning packet. Thank you Bill!!

Banana Crumb Muffins

Delish! After reading previous reviews, I subbed whole wheat flour for regular, used 1/2 cup white sugar and 1/4 cup brown, added 3/4 t cinnamon and 1/2 t nutmeg to the dry ingredients before mixing. Used 1/3 cup canola oil instead of butter. Used brown sugar in crumb topping. Now that I'm writing it, it seems like I made a lot of changes. Not sure how it would have turned out as written, but they were awesome with the alterations! Also, it made 12 pretty good-sized muffins cooked at the same time/temp. This one's a keeper!

Juicy Thanksgiving Turkey

This was the first turkey I've ever made. I was terrified by all the nay-sayers out there saying that turkey was so difficult to get right and that even a perfectly made turkey was not moist or flavorful. Not being a terribly seasoned chef, I followed the recipe to the letter, and let me tell you... This recipe proves them all wrong!!! My husband even begrudgingly said that it was better than his father's! He thought something was wrong because he'd never seen so much juice when he cut into it. I believe it was as close to perfect as a turkey can get! Thank you so much for this gift!

Chocolate Truffle Cookies

Oh. My. Goodness. Heavenly! Thank you to the reviewer who suggested dipping your fingers in cold water before handling the dough, because otherwise it is a sticky mess! These are SO yummy. They remind me of the Otis Spunkmeyer (sp?) muffins. SO rich and delicious!

Creamy Dill Cucumber Toasties

mmmmmmm. I toasted some soft French bread in the brioler. I used sour cream instead of mayo and def did not use the entire package of Italian dressing mix (maybe half). The cukes and the dill gave it just the right amount of cool against the salty of the cheese spread. I made it for my daughter's 3rd birthday party and it was a huge hit. Yummy!!

Elbows with Cauliflower and Brussels Sprouts

Can't believe even my picky 4 yr old gobbled this up! I don't think I'll use as much butter next time. It wasn't necessary. Might also add more wine. It added a nice light flavor, but was barely perceptible.

Fried Corn with Smoked Sausage

Huge hit! I used Emeril's Cajun seasoning and no seasoned salt or msg. Didn't have enough corn and I think that was a really yummy part of it, so we'll make sure there's enough of that next time. Even the toddlers ate it!

quick, easy and yummy. What more could a mom ask?? ;) I didn't have Italian seasoned bread crumbs, so I just added Italian seasoning to plain bread crumbs. Easy peasy.

Mexican Pizza I

I'm a huge Mexican food fan, but my husband gets tired of the old stand by's. This was a huge hit at my house! Even my 2 and 4 yr old's ate it! I love that it's so versatile. Maybe for chicken, bake the tortillas in the oven first (to crisp up), then add beans, chicken, and cheese and just bake for an additional few minutes to melt the cheese, but not so long that the chicken dries out. Top with your favorites and voila! Yum!
