Elbows with Cauliflower and Brussels Sprouts

Can't believe even my picky 4 yr old gobbled this up! I don't think I'll use as much butter next time. It wasn't necessary. Might also add more wine. It added a nice light flavor, but was barely perceptible.

Tender Italian Baked Chicken

quick, easy and yummy. What more could a mom ask?? ;) I didn't have Italian seasoned bread crumbs, so I just added Italian seasoning to plain bread crumbs. Easy peasy.

Black-Eyed Pea Soup

This is the third year I've made this soup for New Year's Day. My mom always told me black-eyed peas were good luck for the new year. :) This year's batch was the best ever. My 6 yr old even gobbled hers up in record time. Having heard that canned tomatoes are killing us (like most everything else we eat these days), I bought a box of chopped tomatoes. They came out more like a chunky sauce than diced tomatoes, but I guess that was just what the recipe needed because it was delicious. I froze half and still have enough for lunch for the next couple of days for me and my family. Looking forward to lunch today for sure!! :) (Note: I still used Ro-Tel. A southern girl can't live without her Ro-Tel.)

Strawberry Vanilla Pancakes

Mmmmm... I used whole grain white flour, added one more T sugar and only did 1/2 t salt per previous reviews. The batter did seem thin, but they fluffed up so nicely!

Creamy Dill Cucumber Toasties

mmmmmmm. I toasted some soft French bread in the brioler. I used sour cream instead of mayo and def did not use the entire package of Italian dressing mix (maybe half). The cukes and the dill gave it just the right amount of cool against the salty of the cheese spread. I made it for my daughter's 3rd birthday party and it was a huge hit. Yummy!!

Banana Crumb Muffins

Delish! After reading previous reviews, I subbed whole wheat flour for regular, used 1/2 cup white sugar and 1/4 cup brown, added 3/4 t cinnamon and 1/2 t nutmeg to the dry ingredients before mixing. Used 1/3 cup canola oil instead of butter. Used brown sugar in crumb topping. Now that I'm writing it, it seems like I made a lot of changes. Not sure how it would have turned out as written, but they were awesome with the alterations! Also, it made 12 pretty good-sized muffins cooked at the same time/temp. This one's a keeper!

Juicy Thanksgiving Turkey

This was the first turkey I've ever made. I was terrified by all the nay-sayers out there saying that turkey was so difficult to get right and that even a perfectly made turkey was not moist or flavorful. Not being a terribly seasoned chef, I followed the recipe to the letter, and let me tell you... This recipe proves them all wrong!!! My husband even begrudgingly said that it was better than his father's! He thought something was wrong because he'd never seen so much juice when he cut into it. I believe it was as close to perfect as a turkey can get! Thank you so much for this gift!

Chocolate Truffle Cookies

Oh. My. Goodness. Heavenly! Thank you to the reviewer who suggested dipping your fingers in cold water before handling the dough, because otherwise it is a sticky mess! These are SO yummy. They remind me of the Otis Spunkmeyer (sp?) muffins. SO rich and delicious!

Mexican Pizza I

I'm a huge Mexican food fan, but my husband gets tired of the old stand by's. This was a huge hit at my house! Even my 2 and 4 yr old's ate it! I love that it's so versatile. Maybe for chicken, bake the tortillas in the oven first (to crisp up), then add beans, chicken, and cheese and just bake for an additional few minutes to melt the cheese, but not so long that the chicken dries out. Top with your favorites and voila! Yum!

Fried Corn with Smoked Sausage

Huge hit! I used Emeril's Cajun seasoning and no seasoned salt or msg. Didn't have enough corn and I think that was a really yummy part of it, so we'll make sure there's enough of that next time. Even the toddlers ate it!

Chicken and Biscuit Casserole

I would have given this 5 stars, but it was pretty time-consuming. I'm a slow cooker, but two hours, start to finish, is longer than I usually have with two preschoolers running around! I used canned biscuits (two cans of the smaller Pillsbury completely covered the dish) and everyone loved it. I love the home-cooked feel of it... just not the home-cooked time!

Chicken Enchiladas II

I really enjoyed these enchiladas, as did my picky husband! Only change is that I used cream of golden mushroom because it's all I had, but it was delish. The tortillas were a bit chewy the first day (probably why you're supposed to use corn), but heated up well in the skillet for left-overs.

Rockin' Good Smashed Cauliflower with Garlic

I thought the mashed cauliflower was a nice change of pace, and definitely great for eating low carb. My husband wasn't too impressed with the consistency, so I think I'll try the hand mixer next time to get them creamier and fluffier. I'm excited to mess around with this to tailor to my family's taste. Thanks!
