Mongolian Beef I

This was GREAT! My picky eaters (husband, 9 y/o, and 11 y/o) loved it. While the kids were shoveling it in their mouth, they were asking me to make it for dinner the next night. I halved the pepper flakes and it was just the right heat for us. I added broccoli. This is a yummy way to get my kids to eat their veggies. Thanks for sharing!

Chocolate Covered Strawberries

Didn't have shortening, so I used 2 TBSP butter as one reviewer suggested. Don't have a double broiler, so I melted on low heat. As one reviewer suggested, I kept the heat on low as I dipped, but only got 20 strawberries done before the chocolate started hardening (maybe my strawberries still had a bit of moisture on them, even though I towel dried each one). I was afraid I'd have to throw out the rest of the chocolate. But, I took the pan off the heat and stirred desperately, and the sauce softened up. I was able to finish dipping. I got almost 100 strawberries (4 lbs) covered with one recipe of chocolate sauce!

Make Ahead Breakfast Casserole

I halved the recipe, except I used the whole can of mushrooms. It was very, very flavorful, not too spinach-y at all, as another reviewer commented. It is, however, very soggy, which some people like. I like a more firm casserole. The flavor is so wonderful, I may give this recipe another try and tweak it by adding more eggs, reducing the milk and perhaps adding a few cubed potatoes.

Chocolate Chip Muffins II

I used mini chocolate chips and made mini muffins. I would have rated this 4 stars, because these muffins tasted like biscuits with chocolate chips. However, there were several factors that earned the recipe an overall 5 star rating. 1) My kids liked them and they were a big hit with the kids at a play group I hosted. 2) I like that there is so much calcium packed into these muffins. 3) They are so quick and easy to make. I will definitely make again, but next time, will double the mini chips and sprinkle some cinnamon sugar on top. I would encourage people not to be discouraged by negative reviews. Try this recipe! Just increase the sugar or the chips - all it needs is a bit more sweetness.

Hazelnut-Mushroom Pilaf

Wow, such fabulous flavor and texture! I used a tad more orzo than called for just because I had a few grains left in the box and I dumped them in anyway. I didn't adjust the liquid and was worried it would come out dry. On the contrary, it came out a bit moister than I prefer (but that didn't stop me from helping myself to three servings!). Next time, I will decrease the chicken broth slightly. Also, I used toasted slivered almonds out of personal preference. Thanks for sharing this recipe, Stephanie!

Beef and Wine Soup with Dumplings

So simple, yet so FABULOUS! Instead of pre-cooking the beef, I just sauteed it with the veggies. I had to add a bit more flour to get the right consistency for the dumplings (I used extra large eggs, which resulted in a runny batter without the addition of extra flour). Thank you, Elizabeth!

Chicken Fried Chicken

YUM!! AWESOME!! Messy, but easy - even foolproof. The results are scrumptious. Crispy outside, tender and juicy inside. I made chicken tenders and my kids, who are not great eaters, loved them! Had to use panko crumbs instead of potato flakes because that's all I had on hand. I love chicken tenders and this is the best recipe I've tried. Will not be needing to experiment with any other recipes - this is the ONE! Thanks, Cassie!

Shemakes Instant Chai Tea

I've been buying $8 bags of the chai tea mix from the grocery store and was so glad to find recipes on this Web site. I tried another chai tea recipe first and it was good, but not quite the same as the store-bought. I tried this recipe to see if it was any closer. AMAZING!! I'm very impressed with Nancy for coming up with this concoction. I used French vanilla powdered non-dairy creamer and omitted the vanilla powder. It tastes just like the mix I USED to buy - from now on, I'll make my own using your recipe. THANKS!!
