Burrito Pie

I thought this was very good. It was well seasoned, but per other reviews, I added Taco Seasoning I (by Bill Echols on this site) to the meat. I also used homemade taco sauce. This was very well spiced. I do agree with others who did not prefer the re-fried beans. Next time I will use only whole beans. I made a couple of additions: 1 pastilla pepper, and 1 cup of sweet frozen corn (adds a nice sweet crunch). I didn't add the green chilies because I didn't have any, and I used regular diced tomatoes (in pantry) More cheese would be an improvement. Thank you for sharing your wonderful recipe!

Maureen's Baked Beans

I have made this several times to excellent reviews. But I don't care what anyone else thinks--I love it! The only changes I make is that I use any type of sausage that I have in the freezer, and I prefer the more spicy dinner sausage. Also, I buy frozen or dried beans when available. It's not too much extra work, and much more healthy without the pthalates from the cans. Be sure to soak the beans the night before.

Overnight Vegetable Salad

Excellent! I made this for Mother's Day cookout to rave reviews! I followed recipe to a T. I made again to take for lunch. This time, I used colored peppers (on sale, and beautiful!) and added extra can of beans to keep me full for the whole day. Low fat, no regular wheat (used spelt flour due to wheat intolerance) Make a bunch, it can be eaten throughout the week!

Delicious Ham and Potato Soup

excellent! I followed the recipe except I substituted soy milk (we don't eat milk) and didn't add the extra salt (there's enough from the bouillon. It's easy to make with stuff I usually have in the fridge/pantry

Carmel Apple Martini

Very good as written, EXCELLENT with the caramel on the rim and on the bottom. For those who think it is "too strong:" Please see the definition of a martini. If you add juice, and it's just a mixed drink in a martini glass. And for those who thought it "tasted" too strong, get a better quality of vodka! This drink is sweet(which I like)and strong(appropriate)and goes down like candy with the caramel syrup. Be Careful!!

Naan Bread Margherita Pizza with Prosciutto

Very easy. I used what I had: I brushed the naan with coconut oil, then toasted the garlic on top in the broiler, topped with medium cheddar slices, sliced cherry tomatoes, grilled brown onion, ham, dried basil and black pepper. It was a big hit.

Slow Cooker Macaroni and Cheese I

I love it! Who knew you could make mac and cheese in a slow cooker? I changed a few things due to stock on hand, and personal preferences. It still came out great. I used whole wheat rotini. We don't use milk, so I substituted with almond milk, and substituted evaporated milk with powdered buttermilk (I keep in fridge for recipes), then added 1/4 cup Parmesan. Omitted salt. Next time I will remember to add the mustard powder.
