Pork, Broccoli and Rice Casserole

Really great for cooking something super fast that is (semi) healthy and filling. I left out the Mayo b/c I figured the 2 cans of condensed cream of celery would be enough. And I used cumin instead of curry powder b/c I didn't have any. Some suggestions for making this healthier: - use fresh veggies - opt for chicken breast over pork - use reduced fat cream of celery - opt for long grain brown rice over white - alter the ratio of grain-meat-vegetables This is a very versatile recipe and good for those times you don't feel like cooking a big meal but don't want to spend money outside.

Summer Salad with Cumin-Crusted Salmon

I was surprised how well the cumin-crusted salmon went with this salad since cumin and balsamic don't seem like the idea mix in my head. But it provided a really good kick that tasted great. :-) Will definitely make this again in the future.

Pizza Casserole

I decided to make this recipe as a quick way to feed our "family" of 4 with hopes of having leftovers to store in the freezer. My roommates liked it so much that "serves 7" really wasn't an accurate estimate for me. For me though, I would have preferred something a little less protein-&-carb-packed and something with more vegetables. Next time (b/c I think there will be a next time, judging by the approval of my roommates) I will reduce the amount of pepperoni and ground beef and add more vegetables (like mushrooms).

Spring Strawberry Salad with Chicken

Delicious. I love how strawberries and balsamic taste with goat cheese. I made some changes to this. I used used 1 tbsp olive oil and 2 tbsp of balsamic vinegar instead of the balsamic vinaigrette. I also used a spring salad mix instead of spinach. I also found a box of sesame candied pecans at an asian grocery store that really made a good finish to this salad. I think for an added taste, sliced pears or apples would go well too.
