Hawaiian Sweet Potato Casserole

I had no problems making this recipe and it turned out great with lots of flavor. I changed the recipe around a bit though. I began by peeling the sweet potatoes and cutting them into cubes before I boiled it.. Then I added extra brown sugar and cinnamon since people said it was a little blah. As a garnish I made some toasted coconut for the top! :)

Tamale Casserole

Yummy! Much easier to make than tamales and still the great taste. I changed the recipe around a little by adding cheese to the inside and some extra veggies like scallion and poblano pepper to the inside. I thought mine turned out a little mushy as well, but as you let it sit and cool down it thickens. I will definitely be making this again!

Tomatillo Guacamole

Feta and Roasted Red Pepper Dip

Great recipe, but I make mine a little different. I use two red peppers which I sautee myself and I include the garlic and add some basil as well here with the olive oil. Once it cools, I add the entire mixture to the food processor along with 1/3 cup of plain yogurt (to taste, can be omitted completely) and 1 1/2 tea of hot sauce (also to taste and can be omitted.

Cottage Cheese Chicken Enchiladas

Turned out yummy, only change I would make would be make it a greater chicken to cheese ratio. It will help thicken the enchiladas and make them less mushy :)

Asian Ginger Dressing

Nothing like I expected.. I was hoping for the traditional dressing you get in the restaurants.But this was still a good recipe. I would either decrease the amount of oil or substitute seseme seed oil.

Japanese Ginger Salad Dressing

Good, but I made a couple changes. I did half seseme oil and half olive oil. I double (or even tripled) up on the honey and mustard since the soy sauce took saltiness to the extreme. To thicken the dressing I added 2 T of mayo and 1T of corn starch. Before refridgerating I stuck it all in the blender to emulsify better than just whisking... YUM!
