Garlic Lover's Pizza Crust for the Bread Machine

Reviewed: Dec. 14, 2010
This crust is phenomenal! I had never made pizza dough before and using the breadmaker made it SO EASY! Now I wish I had doubled the recipe...some breadsticks like others suggested would have been great! I added home-made tomato sauce, chicken, bacon, canned green peppers, onions and ricotta and mozarella cheeses. I did add some rosemary, parmesan and extra garlic in the crust mix while it was in the bread machine. Sprinkled a little extra flour while rolling and wahlah! Perfecto! I baked it on the grill and next time will not pre-bake the crust as it turned out a little dark, but all in all this is a winner! I can't wait to make it again! Thank you!

Milk Chocolate Pecan Pie

Reviewed: Dec. 14, 2010
I made 8 pies for Thanksgiving this year, as I couldn't make up my mind which one everyone would like! This was a favorite by far, and my daughter said I need to make it every year now! It was simple to make and not over-chocolatey...the combination of chocolate and pecans was wonderful! I used 3 milke chocolate bars as that's all I had on hand and it turned out awesome! Thank you!

Greek Egg Biscuits

Reviewed: Dec. 14, 2010
These Greek cookies, also known as "koulourakias" are simply amazing. I make them every year around Christmas and have since I was a child! My 3 grown children love them and they are not too sweet...just perfect for dipping in coffee! Thank you for publishing this wonderful cookie recipe! (I omit the sesame seeds as I always preferred them plain, although many relatives have added anise, lemon or orange rind or the sesame seeds).

Cardamom Almond Biscotti

Reviewed: Dec. 21, 2010
This biscotti recipe is wonderful! The "cookies" turned out just right...not too hard, not too soft. I did end up omitting the cardamom. I added a dash of nutmeg and ginger, replaced the almond extract with maple extract, then added 1 cup of grounded roasted almond slivers and 1 tbsp fresh ground coffee grounds. I sprinkled half the batch with sweetened cocoa powder and left the other half plain. I will DEFINITELY be making this again! They melt perfectly when dunked in your favorite cup of coffee! (Hint...since the dough is kinda sticky, just spray pam on your hands when shaping into the loaves) :)

Baked Omelet Squares

Reviewed: Feb. 20, 2011
This amazing omelet casserole is now our new favorite comfort food! I did modify the recipe a bit and am quite tickled with the way it turned out! First of all I lined the greased casserole pan with crescent roll dough and prebaked that crust til lightly browned. I used a dozen eggs, substituted whipping cream for the milk (just because I had it on hand), added fresh spinach, chopped red, yellow and orange bell peppers, leftover diced/smoked ham, fresh scallions, garlic and spices to taste, split grape tomatoes and added 1 can of southwest style corn that I had leftover from a previous dinner. I layered the grated white/yellow cheddar mix cheese first, then the pepper/onion/corn mixture next, and poured the egg/spinach/tomatoe mixture over the top. I baked this for 30 minutes, turned off the oven and sprinkled more cheese on the top and let that melt in the still warm oven. Wahlah! My husband is on his 2nd helping, and although I made enough to send it to work with him for breakfast throughout the week, I doubt it will make it that far! This is DEFINITELY a keeper, and SO easy! There are SO MANY different ingredients you can substitute and I am sure it will be spendid each way! Thank you thank you thank you for a wonderful comfort/breakfast meal! :)
