Apple Crisp II

I added 1/2 cup of ground walnuts and sprinkled it over the topping. It gave it a nutty flavor that was non-intrusive. Yum!! This recipe is a wonderful middle ground in a family that 1/2 prefer oatmeal topping and 1/2 prefer a more cake like topping. This is the new favorite for both sides.

Rhubarb Strawberry Jam

Turned out nicely. My husband and son said they didn't know the strawberry flavor was from jello. It tasted good but I think next time I will throw a few strawberries in it.

Burger or Hot Dog Buns

I proofed the yeast and made this in my bread maker on the dough cycle. I split it up into hotdog and hamburger buns. I also used half wheat flour and half white flour.

Banana Cupcakes

I had a second batch in the mixer not 5 minutes after my taste. I knew these were not going to last. My cupcakes turned out light, fluffy and simplistically divine. I am happy to see a recipe that does not need to be tweeked to rate 5 stars.

Chocolate Zucchini Muffins

The spices did not over power the chocolate in this recipe (which was a concern of mine). It enhanced it nicely. My son and husband enjoyed these very much. I used frozen zucchini that I put up last fall. I was concerned because when I defrosted my zucchini there was a lot of liquid in the bag but I added it to the mix anyway and the muffins were delicious. This is one of the first recipes that I did not make ANY changes to after baking the first time.

Chicken Biscuit Pie

This was a very quick and tasty meal. My son (who does not like meat) had seconds. I would have given this 5 stars but I did make some substitutions. I make the biscuit mix first so the mix would have extra time to get fluffy. I added extra milk so the biscuit mix was more like VERY thick pancake mix. I used 1/2 bag of mixed veggies. I brined 2 chicken breasts (15 min,) and cooked them on my Foreman grill and added them cubed. I put the chicken mix in a 9x13 cake pan and added dollops of the biscuit mix (allowing room for spread). I covered the pan in tin foil the first 1/2 of the bake time (this make the biscuits cook through but prevented the tops from becoming too cripsy. Next time I will double the Chicken stew mix for a 9x13 pan.

Baked Sweet Potato Sticks

Maybe it was just me, but I didn't like this recipe at all. I love sweet potato sticks. Maybe the ones I usually order were deep fried. I will try that instead.

Black Bean Chili

This recipe has potential to be a 5-star. I feel it just needs a little tweeking. I used canned mushrooms instead of fresh, a can of tomatoes with green chilis instead of fresh romas, and a can of sweet crunch corn. These are items that I keep stocked all the time. I put the chili over corn bread instead of rice, as I didn't like the idea of rice and chili. This recipe was loved by my whole family (including my 'meat and potatoes' father.)
