Fast and Easy Tofu Lo-Mein

Super good and couldn't get any easier! Followed recipe exactly with the exception of using 3 ramen noodles instead of 2. Great fast, easy weeknight meal. Thanks!

Coconut Curry Tofu

Super yummy and very easy to make. This was my first attempt at making tofu so I took recommendations from previous reviews and drained the tofu, and seared until golden brown. I used spinach instead of Bok Choy (you need about 8+ cups of spinach). I also was liberal on all the spices. Came out great, everyone loved. Thanks!

Vegetarian Tortilla Stew

Super yummy, easy peasy and healthy. 5 stars from me. Added a can of refried beans to thicken it and some rice too. Topped with cheese and avocado. De-lish.

Grilled Salmon I

This was really good! I only was able to marinate it for about 45mins, but I flipped a few times while soaking. I also added minced garlic to the marinade. Then I made foil tents (with cracks to breathe), added some marinade and baked at 425 for 15 mins. Then I uncovered and broiled for 5 mins. Turned out really good. My BF loved it, and cleaned his plate. I made with almond rice and broiled veggies. Next time I will add a sprinkle of cayenne to the marinade. Keeper!

Marinated Grilled Shrimp

So flippin good. Second time making this. I cut the recipe in half for 1pd of shrimp for 2 people, but kept the cayenne the same + some (We like it with some kick, but still wasn't too spicy). Tried it with ketchup just for ease and it was delish as with tomato sauce. Served over rice with veggies on the side. Will be making this again and again!

Garlic Shrimp Linguine

Only 4 stars because the ingredients really should be quadrupled (x4). That is what I did with 8 garlic cloves, fresh basil (1/2 cup), and red pepper flakes. Ingredients are wonderful together and will make again.

Red Skinned Potato Salad

This is a great potato salad, but I only gave 4 stars due to the ingredient ratios. I used 5lbs of potatoes to the listed ingredients, which came out wonderful. I can't imagine how mayonisey and eggy it would be if I hadn't done this. It was perfectly sticky, and I received tons of compliments. I used 1/2 white onion and 5 stalks of green onions. I also sprinkled with cheddar cheese.

Carrot Cake

I followed the recipe exactly with the exception of subbing pecans for the walnuts (personal pref). I made cupcakes, and this recipe yielded about 30 cupcakes - bake on 350 for about 30 mins. Only gave 4 stars because it's a little heavy, I agree with other users that could use 1/3 less oil. If I make again will use less oil. I also used cream cheese frosting II from this site - which was a delicious combo. Will also use less than 1 cup nuts, i don't like a super nutty carrot cake.

Greens with Cannellini Beans and Pancetta

Too much onion in this recipe. It calls for 1 full onion, and I only used half (cause it looked like way too much) and so glad I did, cause it was still too much. The rest of the flavors were OK, but not amazing. I sprinkled with a little feta cheese and balsamic and ate with crusty bread. I think 1/2 cup onion would be plenty for this recipe, and trust me I use onion in all my cooking.
