Spinach Lentil Soup

Wow. If I was stuck on an island, and I could only have one meal, this would be it! Everyone in our family stuffed themselves, having 2 and 3 bowls because they could not stop eating this!! I used all chicken broth, no water, and high test chicken broth, not the low sodium kind (we like salt!). I took the advice of others and added uncooked rice directly to the pot. I doubled the rice to 2/3 cup (we like rice!) and added an extra cup of chicken broth to make up for the liquid absorbed by the rice. With the exception of those changes, I kept to the recipe. This was amazing! Thank you for this recipe!

Apple Squares

Thank you BarbiAnn for a great recipe and thanks to the reviewers for such helpful advice. I doubled the recipe and used two cups diced Honey Crisp apples. baked 33 minutes as suggested in a 9x13 pan. Next time I'll bake for an extra 3-5 minutes (they were a little too soft). Outstanding flavor! I brought them to our annual block party and they were gone. Lots of raves. Our entire block thanks you!!

Brenda's Strawberry Slush Delight

I made this recipe, as shown, for a girl's weekend away. We added a little more rum than called for, one fifth, but other than that, followed the recipe exactly. It was fabulous! The consistency was great and it felt like we were on a tropical island! Serve it over Seltzer, not soda.

Waikiki Meatballs

My husband and son loved this meal. I used ground turkey and I cooked the sauce separately in a pot and then poured it over the meatballs to serve. I think keeping it separated is better for the left overs. It reminds us of sweet & sour chicken at a Chinese restaurant!

Great flavor, moist and tender chicken. So easy to prepare. Goes well with rice, but the plate needs some color then. A spinach salad and a bright colored garnish would help the presentation.

Hawaiian Chicken I

This was a nice recipe, however there is way too much sauce, my family needed only a quarter of what was prepared. It was great served with sticky rice. I bought a fresh pineapple and cut 1/2" thick slices, grilled it, and placed it on top of the chicken breast. Nothing better than grilled pineapple!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

These tacos were easy to prepare and really elegant! I doubled the salsa recipe and was glad I did - we used it up. My entire family loved this. The Salsa and dressing can be made ahead of time so it can be quick to put together later in the evening. I am planning on serving them to my friends who are chefs!
