Carrot Soup

YUM! I used black pepper and curry powder to season instead of dill weed, since I didn't have any. It came out GREAT! So creamy without any cream or flour, so lactose and gluten free to boot!

Zucchini and Onion Pancake

This was a soggy gross mess. It didn't stick together at all so I had to add egg. After the egg, it did stick together, but it was still a soggy gross mess. And I squeezed a ton of water out as best I could, salted it to leech out more water, etc. How did anyone get this to work? Horrible- I threw the whole batch out. What a waste of ingredients!

Roast Chicken with Rosemary

Dude this is the best chicken I eeeeever made! I rubbed it with olive oil then rubbed salt, pepper and rosemary all over it. Stuffed the inside with onions and orange slices and a bunch more rosemary sprigs. Also shoved like 5 more rosemary sprigs underneath its skin. Cooked as the recipe directs. OMG SO GOOD!

Acorn Squash Soup

I didn't have dill weed so I left that out, and I used heavy cream instead of evaporated milk. Otherwise, everything was the same. I thought it was too bland so I added a bunch more cayenne, and some paprika, more curry powder, and a hearty helping of Mrs. Dash. Then it tasted okay, not as bland especially with the bacon to give it some kick. I might make this again, if I could find a way to really spice it up.

Baked Yam Fries with Dip

This was fantastic! I also included spears of eggplant and broccoli stalks with the yam fries and everything was so good! I think I even like the eggplant more than the yams- I recommend trying this with any vegetable you have on hand. I didn't have any sour cream, so I used plain, full-fat yogurt. I also just eyeballed the spices to put in there, so I can't say how the dip in the posted recipe compares but mine turned out GREAT. I wanted to eat it by the spoonful! This recipe is so easy to make and super versatile, not to mention healthy! I rarely review recipes I use on here, but this one was so great, I had to rave.

Cinnamon Griddle Cakes

Well, I made this almost exactly like the recipe says. I only left out the corn syrup, but otherwise exactly the same. I was pretty underwhelmed. It seemed basically like plain old pancakes to me. After the first few tasting bland, I doubled the cinnamon and vanilla in the rest of the batter, but it didn't seem to matter much anyways. I doubt I'll make these again, unless I just want quick pancakes.

Spicy Chili Seasoning Mix

I recently was making chili and found myself without a chili seasoning packet. I looked up how to make chili seasoning myself and came upon this recipe. I didn't have any coriander so I left that out but kept the rest the same. I WILL NEVER GO BACK TO STORE-BOUGHT PACKETS! This was very fresh tasting and I thought it made my chili even better. Thanks!

Four Cheese Margherita Pizza

I freaking love this pizza! I've made it many different times and many different ways depending on which ingredients I have on hand: dried basil if no fresh, skipping some of the other cheeses if I only have mozzarella, adding sliced jalapenos, etc. My biggest tip for this is to put the tomatoes UNDER the cheese rather than on top; this way the cheese can get all golden brown and crispy rather than staying soggy under the tomatoes. At the end of the cook time, I like to broil it for 2 minutes to really get the cheese bubbly :)

Chicken and Artichoke Pizza with Fresh Tomatoes

The combo of artichoke/garlic/chicken was to die for! After cooking the chicken and garlic in the boiled artichoke juice, it was sooo tasty and succulent; but when I added it on top of the pizza and then baked it, the chicken got a bit dried out... next time I might skip the pizza entirely and just put the chicken and artichoke over some pasta or something. I followed the recipe exactly and found the end product was a BIT bland until I added some freshly shaved parmesan on top and then it was great. If I make this pizza again, I might try a white sauce instead of tomatoes as it seems it might complement the artichoke/chicken flavor better.

Taco Seasoning I

This made some delicious tacos.... but... They were too salty! I followed the recipe EXACTLY and I think I could have cut the sea salt by a good amount or left it out entirely. After I browned the beef, I added some tomato sauce and water, then simmered until the liquid was absorbed and the beef was saucy and tender.

Eggplant with Garlic Sauce

Yum! Use all 5 tsp sugar! I used less sugar as recommended by other reviewers but regret it! It should have been sweeter, like the original recipe calls for. I used a ton of fresh garlic and a little garlic powder too. And this recipe can be adapted with any other ingredients- onion, tofu, mushrooms, etc! Chicken broth instead of water is good too.

Juiciest Hamburgers Ever

This WAS the juiciest hamburger ever. It tasted AMAZING the first time I made them- I didn't have any dry bread crumbs so I crumbled in some sliced wheat bread. The second time I made them, I used dry bread crumbs and they were not the juiciest or most delicious =(. I definitely recommend not using dry bread crumbs for these.
