Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Dec. 18, 2011
Simple, quick, delicious, and pretty on a serving platter. What more could I ask for? Adults and children enjoyed this. Made as written except for two small changes...added a splash of white wine to the veggies & sausage because I had some to use up and used f/f half & half instead of heavy cream. Perfect!

Slow-Cooker Pepper Steak

Reviewed: Dec. 11, 2011
Made with a few modifications, and this was delicious. First, I did not brown the meat before adding to the slow cooker. It was so tender and delicious that this step wasn't missed. Used mostly red wine & a little hot water for the bouillon, fresh garlic, and replaced 1 tbsp of soy sauce with Worcestershire. As per the advice of numerous reviewers, peppers were added about 1.5 hrs before serving & were still plenty soft. Very tasty & simple!

Flourless Chocolate Cake II

Reviewed: Jan. 1, 2011
This cake has become a holiday favorite in my household. I always serve at our Christmas Eve dinner. Everyone is always super impressed and would never guess how simple this is to make. I double the recipe and bake in a 10" springform pan. I have never felt the cocoa powder compromises the texture, which is smooth and velvety. Cover with chocolate ganache and serve with raspberry sauce, whipped cream, vanilla ice cream, or all of the above. Absolute chocolate decadence!

Great Green Salad

Reviewed: Jan. 1, 2011
Very nice and simple salad, especially when you are in the mood for savory. The avocado and cheese add nice creaminess. The dressing is quite strong and would be more complimentary with a bit less sour and bit more than a pinch of sugar.

Mouse's Macaroni and Cheese

Reviewed: Jan. 1, 2011
Fabulous mac & cheese! I did change the recipe slightly in that I used a different cheese combo--the processed cheese food as called for (processed cheese may go against nature but, hey, it's really necessary for good mac & cheese--don't fight it!), extra sharp white cheddar, and fresh parmesan. The white cheddar added a lot of flavor, but the impressive thing about this recipe are the measurements. Yes, it will look extra saucy, but once it bakes and sets a bit, all of that sauce is soaked into the noodles and it is excellent! Without this recipe, I would have been tempted to add more noodles when they are not needed.

Maple-Garlic Marinated Pork Tenderloin

Reviewed: Jan. 1, 2011
Very nice recipe. I marinated about 3 lbs of tenderloin in the amount of marinade called out for 1.5 lbs and there was plenty. The only changes I made to the marinade were to add one additional tbsp of mustard and about 1 tsp of orange zest, which was a tasty touch. Baked at 375 for 45 mins (no basting). For the sauce, I reduced over medium high heat, then mixed in a little butter and flour. The meat turned out moist and not too sweet. The sauce was, of course, sweet and delicious with the pork. Very easy and a hit at the buffet table.

Raspberry Sauce

Reviewed: Dec. 22, 2010
Excellent, simple sauce! As written, the sauce turns out a bit on the tart side. This works well for me as I am usually serving it with something ultra sweet. Sometimes I add a bit more orange juice or include some orange zest for extra flavor. Stick with fresh berries for sure!

White Chocolate Macadamia Nut Cookies III

Reviewed: Dec. 18, 2010
These came out beautifully. I doubled the recipe and used half butter, half shortening. While subtle, I think the almond extract gives this recipe a little something unique and is very tasty.

Big Soft Ginger Cookies

Reviewed: Dec. 18, 2010
A very yummy and simple cookie to make! These are nice to mix in on holiday cookie platters, and a lot easier than gingerbread men. I made these as miniature cookies (2-bite size) and rolled in red and green sugar. Very cute and tasty! I am guessing they will taste even better tomorrow.

Aunt Blanche's Blueberry Muffins

Reviewed: Sep. 6, 2010
Just whipped up a batch of these yummy muffins! Kitchen smells great. This was simple to put together and the muffins are delicious. I ended up with 16 muffins, having filled the muffin cups nearly to the top. EDIT: I hate to say it, but these aren't so hot on day two. They are great if you expect the batch to be consumed right away, but if not they don't hold up well. On day two, the texture wasn't muffin-like at all and they seemed less flavorful.

Pimento (Red Pepper) Cheese-Bacon Burgers

Reviewed: Sep. 6, 2010
This burger was delicious. I made everything according to the recipe. The white/yellow cheddar combo is great! The topping would be delicious on chicken breasts or in a grilled cheese sandwich as well, maybe with some tomato, spinach, and bacon.

Faux-reo Filling

Reviewed: Sep. 5, 2010
This has become my favorite cookie filling! I love the ratio of cream cheese to butter. You can definitely taste the cream cheese, but it is not too cheesy. If you are really looking for a filling to compare to the filling in an Oreo cookie, use only butter/shortening and no cream cheese. Sometimes I use half almond extract and half vanilla and that is tasty as well.

Chicken and Broccoli Braid

Reviewed: Sep. 5, 2010
As per many previous reviewers, I sauteed all veggies slightly before assembly. I used ground chicken, which was easy and worked well. I also used poultry seasoning on the chicken and only about half of the dill. I know I added a bit more mayo than called for as the filling seemed on the dry side. As far as flavor is concerned, this was good but not "wow". If I make this again, I will use a nicely marinated chicken and some fresh herbs. As far as presentation goes, this was beautiful and would be perfect for a buffet style dinner.

Chocolate Sandwich Cookies II

Reviewed: Sep. 5, 2010
I made these cookies using Butter Recipe Fudge cake mixes as that was my only option. Ended up dropping them onto the cookie sheets as the batter was too soft to roll. I made the mistake of flattening them slightly and the first two batches were paper thin and unusable. Switched to a mini scoop with no flattening and they baked perfectly in about 10 minutes. I made Faux-reo filling, my favorite, and the cookies are cute and delicious. The frosting does overpower the chocolate cookie a bit, so next time I hope to find the dark chocolate cake mix called for in the recipe. Fun and yummy to make with my son!
