Chicken Noodle Soup

Nice, easy recipe. To save a step, you don't need to cook the chicken ahead of time. Just add uncooked chicken breasts in step 2. When they're cooked (~10 min), take them out, shred them with 2 forks, then toss the chicken back in the pot.

Broccoli and Cheese Brunch Casserole

Great flavor - very well received. I borrowed an idea from a different recipe and used a container of crescent roll doll on the bottom of a 9x12 pan. Made for easy serving, since the egg didn't stick to the bottom of the pan. You could definitely get creative with this recipe (changing meats, veggies, cheese, etc).

Apple Raisin French Toast Strata

I used Pepperidge Farm vanilla swirl bread and a cup of blueberries instead of apples since they're in season. Made for a delicious blueberries and cream concoction. I bet this recipe would be a good base for all different types of fruit and bread.

BLT Dip

Red Skinned Potato Salad

Very good with a big dollop of dijon mustard and some dill for extra flavoring. With the mustard, you can cut back on the amount of mayo you use.

Apricot Lentil Soup

I didn't have cumin, so I added a teaspoon of curry instead. It came out great! The next day it was thick enough to serve over basmati rice for some nice leftovers.

I agree that the flavor is nice - esp. with butterscotch chips added - but I guess I'm the only one who thought they were a bit greasy. I've never made cookies with oil before... not sure I'll want to again.

Brownies To Die For

Works well in a 9x13 pan, using the 3-egg "cake-like brownies" recipe on the back of the brownie box. They were ready in 30 minutes - moist and delicious. I sprinkled the chocolate chips on top before baking and skipped the pecans.

Joey's Peanut Butter Cookies

Very good recipe - especially with chocolate chips mixed in. The dough is super sticky - I dropped spoonfuls of it in sugar before shaping it into balls - that seemed to help. Also followed the "wet fork" advice. Nice soft texture.

Chewy Peanut Butter Brownies

These are really yummy, especially with chocolate frosting. To double the recipe, I baked them in a 9x13 pan and lowered the temp to 325 (as was suggested by another reviewer) - they were more than ready in 35 minutes.

Zucchini Tomato Soup II

Great way to use up those end-of-the-summer veggies. Have already made it twice - first time added some pasta to make it more of a meal, second time served it as an appetizer topped with fresh grated parmesan cheese. Delish! Used all the seasonings from the recipe, but increased them by quite a bit - was a teeny bit bland to start with.
