Apple Pie Filling

Made a small batch, (1/3 of recipe), doubled cinnamon and added dried cranberries plumped in triple sec. Absolutely wonderful.

Chicken Divan

Taste was excellent. I cut down the mayo to 1/2 cup, used 3 chicken breasts (fried), 4 cups of fresh broccoli and 4 extra large mushrooms sliced, 1 can each cream of chicken and cream of mushroom soups. This yielded enough to accommodate the sauce perfectly and a 3 qt casserole dish was just right. The texture however wasn't very nice. Don't precook the broccoli, it definitely goes slimy as stated in another review. Also, let the dish sit a few minutes after it comes out if the oven, it thickened and the sauce was nicer. I served it with pasta. Definitely use the curry as it makes the dish.

Pesto Spaghetti Squash

Excellent! My husband is a big pasta eater and loved this as a substitute. I used fresh spinach instead of kale, grated fresh garlic, and just used the Parmesan as a garnish. This will definitely go into our meal rotation.

Excellent! My husband is a big pasta eater and loved this as a substitute. I used fresh spinach instead of kale, grated fresh garlic, and just used the Parmesan as a garnish. This will definitely go into our meal rotation.

Crab Stuffed Tilapia

To improve the presentation I held the fillet (tilapia) in the palm of my hand, placed a scoop of filling in the centre then tucked the ends around and placed it tucked side down on parchment paper. As suggested by others I spiced up the crab mixture with extra garlic, Worcester finely chopped onion and celery. Rather than overcook the fish, I turned on the broiler, poured the sauce across and broiled for about 90 seconds until browned. I also reduced the mayo in the sauce by half. Looked lovely and was delicious. Served it with broccoli soup, twice baked potato topped with cheese and green beans.

Savory Portobello Mushroom Burgers

Wonderful flavor and texture. I'm a die hard burger girl and was prepared to hate this. One bite and I was a complete convert! Followed recipe exactly, but brushed them with marinade 2 hrs before. Used hamburger thins rather than rolls, and topped them with roasted red peppers and Tex-Mex cheese.

Microwave Pralines

This recipe was excellent as is. Made it a 2nd time and tried stirring in chocolate chips during the 3 minute cool down. Complete disaster! Mxture became crumbly and ugly. Still tasty though :)

Pumpkin Cheese Pie

Delicious. I pumped up the spices as we like a more intense flavor. 1 tablespoon cinnamon, 1/2 tsp all spice and 1 tspn nutmeg. Also increased pumpkin slightly to use the whole large can, about an extra 1/2 cup. Filled two Graham cracker shells from the grocery store perfectly. Quick and easy dessert!

Lamb Chops with Balsamic Reduction

Excellent as is. Reduced sauce to 1/4 cup and it was delicious. My husband rated this a 5 as well. Used 1" thick loin chops, they took 5 minutes per side and I let them rest for 10 minutes. Done perfectly.

Chewy Brownies

As with other reviewers I increased the cocoa. I used 3/4 cup, plus 1 cup pecan pieces and 1 cup chocolate chips. Absolutely excellent. Exactly 27 minutes cooked these perfectly. If you line the pan with parchment paper you can easily turn it over on a cutting board, and cut it into squares. These freeze beautifully, and are actually delicious frozen as well. They reheat nicely in the microwave to serve with ice cream. I am a serious chocoholic and one of these satisfies my craving.
