Master Recipe for Rich and Creamy Cheesecake

Reviewed: Apr. 21, 2011
I made the Reeses cup version and it was good, but not great! I used 1 cup of gluten free cookies for the crust and based off another review, used 1/2 cup plain non fat yogurt instead of the sour cream & heavy whipping cream, which cut almost 100 calories. The base cheesecake was great but I didn't love the peanut butter cups mixed w/the cheesecake (and I love Reeses them on their own). I didn't use a water bath this time but let my eggs & cream cheese sit out much longer than usual & this was my first cheesecake that has not cracked, hooray :) I did cook it for an hour & then left the oven door closed w/the oven off for 10 minutes, then cracked the door for an extra 10 minutes prior to removing the cheesecake

Green Slime Smoothie

Reviewed: Jan. 25, 2011
YUM!!!! I just bought a blendtec blender and the order in which you put the ingredients in matters! Putting the banana and spinach in first helps it blend... I also used water instead of ice and added the strawberries last. The first time I made this, I used honey, the second time, I used agave and it tasted the same both times. Thanks for this great recipe!

Italian Sausage Soup

Reviewed: Jan. 18, 2011
AMAZING!! I used an extra clove of garlic, 1/3 lb spicy Italian sausage, 2/3 lb sweet Italian sausage, added an onion, a potato, and about 3/4 cup red wine. I omitted the salt b/c the broth I used had quite a bit of sodium and added some Italian seasoning! This is one of my new favorites!

Butternut Squash Risotto

Reviewed: Jan. 14, 2011
YUM!!!!! I roasted my squash at 425 degrees for about 30 minutes and added it in at the very end. I used chardonnay and based off other suggestions used only 4 cups of veg. broth. I used shaved Parmesan instead of grated and it was fabulous!

Key Lime Cheesecake I

Reviewed: Jan. 14, 2011
Couldn't find key limes so I used 1/2 cup of regular lime juice and added a very small amount of vanilla. The lime flavor was perfect. I used gluten free animal crackers for the crust (which was my favorite part). I questioned only baking this at 300 degrees... and wish I had cooked it at 325. It wasn't quite done and we called this "key lime custard". So, if you bake it at 300, definitely do the whole 65 minutes. But, even with it's custard texture, it was delicious!!!

Gourmet Mushroom Risotto

Reviewed: Nov. 18, 2010
At first I thought this was great but tasted like it was missing something...and then I realized I only used chives...I completely forgot the shallots! I used vegetable broth and shaved parmesan cheese. This was worth the arm workout and I'll definitely make it again!

These were great but next time I'd definitely add some green onions for a little extra flavor.
