Pesto Stuffed Pork Chops

These were absolutely delicious! I went a bit heavy on the red pepper flakes because we like things spicy, and served with wild rice and sauted snow peas. I will definitely make this again.

Baked Dijon Salmon

Thought this was fabulous, restaurant-quality (and I live in Napa Valley). My husband is not fond of salmon, so I made his portion with cod -- he loved it, but believe me, the salmon was much, much better.

Roasted Garlic Mashed Potatoes

Pear Pie I

I consider myself a pretty good cook, but not a very good baker. Also, I don't like anything too sweet. May that's why I liked this so much. It was easy and delicious, and my husband, who DOES like sweets, loved it too.

Chicken and Bacon Shish Kabobs

Great combination of flavors. Did mine on my Foreman-type grill, closed. Next time I will try fresh pineapple in larger chunks. I served this with asparagus cashew rice pilaf from this site.

Thai Pork Satay

This was really good and pretty easy. I didn't have a lemon, but I substituted lime, which was fine. Also, I couldn't get the water chestnuts to stay on the skewers, but that added entertainment value.

Grilled Pork Chops with Summertime Salsa

I like this one. The meat is juicy and the flavor is slightly spicy. I served it with lentils and steamed broccoli, and the salsa was great on the lentils. Left out the mint because we don't care for it.

Cuban Ropa Vieja

Loved this. Had to change the cooking method since my slow cooker disappeared last time I moved. So I just compromised, cooked it 5 1/2 hrs. on my stove's lowest setting. A slow oven would probably work too. Like most slow-cooked meats, it was better the next day.

Three Bean Salad

Great bean salad...neither too sweet nor not sweet enough. I used dried pintos and garbanzos, along with canned green beans, and did not have to go to the grocery store because I had everything on hand. Surprisingly, it was NOT better the second day as some things are...eat it the day you make it. Just a comment though: this is NOT vegan. It has honey in it.

I was in the mood for a chicken and pasta meal -- imagine my delight when I opened this site and this was the featured recipe. I also used marinated artichoke hearts and recommend that change. Leftovers were surprisingly good cold the next day!

Refried Beans Without the Refry

Wow! This really worked, and you truly don't have top soak the beans. My house smelled like a Mexican restaurant! This one is a keeper for those occasions when you can't be home to cook beans all day.

Blue Cheese Coleslaw

This is really good! The blue cheese kind of melts into the dressing for a pretty subtle flavor. I halved the mustard and went light on the sugar, and we really enjoyed the results!
