Baja Grilled Chicken Wrap

I made this with a few adjustments. I did not have coleslaw blend. I used flour tortillas and mozzarella cheese instead. I also marinated the chicken first and added onion powder and a little bit of cayenne pepper. Delicious! Didn't even need the salsa or sour cream.

Cajun Pasta Fresca

I made this for dinner tonight and Wow, this was amazing! I barely left any for my roommate! I made two changes. Since I did not have vermicelli pasta, I used linguini fini. Also I sauteed the tomatoes in bacon grease and a little bit of olive oil, because I didn't want to waste it. It added a nice smokiness to the pasta.

Banana Frittata

I admit that I was a little nervous making these after reading the negative comments. BUT, These turned out delicious! I did follow some suggestions from other reviewers: mash the bananas instead of slicing them, add a little vanilla extract. I only used 2 TB of oil in a small skillet pan. They turned out delicious. They're more like banana pancakes than frittatas.

Yummy Sweet Potato Casserole

This was my first time making a sweet potato casserole. It turned out quite well. I used three large sweet potatoes, baked them at 375 for 1hr 15min. I also added nutmeg and cinnamon to the mash. The one thing I will change next time is add a little more sugar and vanilla (though my parents thought the sweetness was perfect). The pecan topping is absolutely delicious! Good recipe!

Easy Meatloaf

Great easy meatloaf! The whole family loved it. I did make several changes based on other comments: couple splashes of worcestershire sauce, 1/4 cup of water (makes it extra tender) , 1 tb parsley flakes, basil, oregano, sprinkle of onion and garlic powder. Sauteed onions in garlic and butter. DOUBLE or TRIPLE the sauce. Reserve some sauce for later. I used dijon mustard instead and decreased brown sugar to 1 TB.

Amazing Mussels

Delicious!! Really brings out the flavor of mussels. I did make a few changes. I used canned jalapeno pepper, red pepper flakes (instead of red chili), added 1 Bay leaf, a sprinkle of chili pepper and black pepper, and rice cooking wine.
