Vegetarian Moussaka

Made this last night & it was fantastic! I used a mandolin to slice the veggies and roasted them as other reviews suggested. I also used canned lentils, added fresh red bell pepper to the onion sauté and used diced fire roasted tomatoes with chilies in them which added a great kick and lots of flavor to the mixture. I added 1tsp. cinnamon and Greek seasoning to the lentil mixture. I doubled the Béchamel sauce since I was using a longer pan with less layers and added 1tsp. of cinnamon and nutmeg to the sauce. It was not labor intensive just required lots of baking time. It smelled wonderful & came out delicious! This recipe is a keeper & I will definitely be making this again! Thanks for sharing!

Double Layer Pumpkin Cheesecake

Great recipe! I made a graham cracker crust with a pinch of cinnamon, nutmeg, and clove. I made a few changes the second time around and it came out even better. I used the entire can of pumpkin puree, doubled the spices and vanilla extract, and beat the mixture until it was lump free and very smooth. I mixed everything up instead of doing the double layer and it came out much more like a real cheesecake. Thank you for sharing!

Balsamic Cream Sauce

Delicious and lovely sauce! I made a few changes which worked out well: used shallots instead of onions, mixed 1 tblsp of corn starch with milk added that to 1/2 cup of milk in addition to the cream, and added 2 cloves of garlic to the sauce. Also skipped the ckn bouillon granules and doubled the balsamic vinegar & cheese. I mixed the sauce with fresh garlic linguine pasta mixed with sauteed spinach, mushroom, onions, and peppers.

Spicy Fish Soup

This is a fabulous, easy, & flavorful fish stew! I made a few changes for our preferences: added ½ cup chopped carrots, 1 celery stick chopped, ½ cup corn; subbed 2 fresh jalapenos for the green chilies, sub veggie stock for ckn stock, sub red bell pepper for green, used canned fire roasted diced tomatoes; added 1 tsp. old bay, pinch of Cajun seasoning, 1 extra clove of garlic. Used sour cream instead of yogurt (what I had on hand) and served it with lime wedge & avocado slices on top. Turned out spicy, delicious, and very filling! Thanks for sharing this great recipe. I will definitely be making this again!

Baked Pineapple Casserole

I made a double batch; subbed 1 cup of brown sugar for white, subbed 6 eggs for 8, added 1 tbsp. cinnamon & nutmeg, and put some bread inside but the rest on top & topped bread with melted butter. Came out delicious!

Zucchini Brownies

Fabulous brownies that make me feel like I was eating something "healthy" ;) Only change I made was adding a 1/2 cup of Ghirardelli Bittersweet Chocolate Baking Chips. The brownies were soo moist and delicious! I was seriously surprised by how good they were! Thank you for sharing the wonderful recipe!

Cranberry Pecan Muffins

Fantastic muffin recipe! The only changes I made was increasing the vanilla to 1 tbsp., adding 1 tbsp. orange rind, adding a pinch of clove, and increasing the nutmeg to 1 tsp. I made 24 mini muffins and 9 large muffins. I also topped them off with Simple Orange Glaze from this site. Absolutely moist & delicious! I will definitely be making these again. Thanks for sharing!

Cajun Seafood Pasta

This is a great recipe for seafood pasta! I used half milk & half heavy cream (same measurements), added 1tblsp of Cajun seasoning and sauteed fresh red bell peppers, red onion, and mushrooms with the green onions before adding them to the sauce. I served this over fresh red pepper pasta which made the dish that much better! This recipe is a keeper! Thanks for sharing!

Downeast Maine Pumpkin Bread

Great recipe! Bread came out moist and delicious. I added 1 tsp. of vanilla, reduced oil to 1/2 cup oil and added 1/2 cup apple sauce. I also did 1/2 tsp. of both clove & ginger. I reduced the sugar to 2 cups using 1 cup brown & 1 cup white sugar. Lastly, I made a melted butter and brown sugar & cinnamon combo and glazed the top while still hot. Will definitely be making this again!

Quinoa and Black Beans

Delicious, simple, quick, and filling! I only used 1 can of black beans & it was plenty. I used 1/2 cup peas & 1/2 cup corn and added some sauteed spinach to the mixture. Also added 1/2 red bell pepper to the onion & garlic saute and doubled the spices. Came out colorful, flavorful, and tasty. Topped it with some chopped avocado & lime juice....Yummy!

Glazed Apple Cream Pie

Everyone loved this pie! It’s a great twist on a classic dish. I used 4 granny smith apples which were just right for the filling. I added 1 tsp. of cinnamon on the apples and 1tsp. of cinnamon in the glaze. I made a lattice topping and the glaze seeped into the apples…..yummy! I’m going to try it with a mixed berry topping next!

Cream Corn Like No Other

LOVED IT!!! Super rich & creamy--my new go to side dish for extra corn! I used fresh roasted corn and blended a little heavy cream with 2% milk for the whole milk part but it still came out great! Big hit at the bbq!

Bread Pudding II

This bread pudding was a big hit at the bbq! I used criasins instead of raisins and added walnuts. Also reduced the eggs to 3 and used left over whole wheat french bread. This was simple & easy! Even better if served warm with a scoop of ice cream!

Baklava

GREAT Baklava recipe! I followed the other reviewers advice and made the sauce first and let it cool while prep & baking the baklava. I also used a combo of walnuts and pistachios. So simple & delicious! I can't wait to make it again!

Easy OREO Truffles

I made these in 2 batches using Newman's Organic O's in original and mint flavored...both were a big hit! I replaced the semi-sweet chocolate with Ghirardelli bitter-sweet chocolate....amazing! Definitely use a food process for the blending of the cookies and cream cheese. It was easier to mold the truffles if you let the mixture sit in the fridge for 20-30mins. I also let the truffles sit in the fridge for about 4hrs before I dipped them in the chocolate. Using a double boiler for the chocolate made the dipping process pretty painless. Easy & tasty…thanks for sharing!

Irish Cream Brownies

Great way to make boxed brownies special. Next time I would add a bit more Baileys to the brownie mix...the flavor was not all that noticeable. I used 6 tblsp. of Baileys & 3 cups of powdered sugar and skipped the coffee in for the frosting. I used a little less than half of the frosting for the brownies and the rest for the "Perfect St. Patrick's Day Cake" from this site. I also skipped the toffee baking bits and drizzled the brownies with chocolate ganache instead.....yummy!

Crazy Cake

I loved this cake! Dairy free, cheap to make, quick, and tastes great! I followed the recipe and added 1 cup of Ghirardelli mini-bittersweet chocolate chips to the batter. Also sifted all the dry ingredients before hand and mixed everything up in a big bowl. Keep an eye on the baking time so it doesn’t dry out. Was a bit hit in my office! Thanks for sharing!

Perfect St. Patrick's Day Cake

It wasn't the best chocolate cake but still a very good cake...chocolaty with a hit of earthy tones from the Guinness. It was easy to make and came out tasty. I used 6 tblsp. of Baileys in the frosting but otherwise followed the recipe as is. Everyone at the St. Pats party seemed to enjoy the cake.

Strawberry Coffee Cake

Fantastic cake that is quick, simple, and easy to put together. I added 1/2 cup of strawberries(and pushed them into the cake), 1 tsp vanilla extract, and mixed half & half white & half light brown sugar. I also substituted brown sugar in the topping and added 1 tsp. cinnamon. Simply delicious!!!
