Spinach and Feta Pita Bake

Deliciaso! I used plain pesto (basil and garlic) I picked up at Safeway. Could've used a little less of it but it was a quick, easy, and healthy dinner. Tip: Don't let pesto dominate the flavor! Try flat bread if you're not a fan of pita bread. Also you can substitute fresh basil leaves if you don't have spinach.

Chicken Pot Pie IX

For a beginner, it was quite a challenge. But I did it! I got 5 starts from my boyfriend and another 5 starts from uncle. :) I recommend you to read Ferguna's suggestion especially if you don't want a dry pot pie. Doubling the sauce as she suggested was a little tricky so I had some struggle with measuring the ingredients for it. I say you just follow your instinct. :) Make sure you don't use a small pot, and taste the sauce before you put the pie in the oven. Make the sauce a bit salty so it turns out just right with chicken and vegetables when the pie is done.

Homemade Mac and Cheese

It's very easy to make and delicious! I've been making this for 3-4 times now and my boyfriend gives me thumbs up. :) Don't hesitate to add more Cheddar cheese and make sure it's "sharp," not "medium." And for me, only 1 cup of milk was enough.

Oyakodon (Japanese Chicken and Egg Rice Bowl)

Oyakodon is one of my favorite Japanese recipe and I have tried it multiple times in an authentic Japanese restaurants in the States and Japan. Compared to those recipes provided by native Japanese home cooks on allrecipes.jp, this is a pretty nice recipe. I'd like to share how my Oyakodon turned out for those of who do not have all the ingredients written here. I used 6 pieces of chicken breast tenders, 1/2 onion, 2cups chicken stock, 1/4cup soy sauce, 3 tbsp red wine, 3 tbsp brown sugar, 4 eggs. The sauce wasn't thick enough, and I thought it was too much soy sauce. Wish I had Mirin. Although I didn't like it much, my American boyfriend loved it. I'd love to try this again with the original ingredients and also with breaded chicken cutlet (Chicken Katsudon)

Chicken Rolls

My boyfriend loved this and he said it was one of my masterpieces. :) I omitted making the gravy. I didn't have any lemon pepper so I used a fresh lemon and squeezed the juice. Good thing I saved this recipe in my recipe box right after I watched allrecipes.tv What's cookin?! ;)

Sesame Beef

500 starts for making me eat two plates last night and an extra big plate this afternoon. Dang, I really need to lose weight! :p I added 1tbsp of honey garlic sauce, 1tsp of blackberry jam, broccoli and cauliflower, and frozen mixed vegetables... Marinated for about an hour for dinner, marinated overnight in the fridge for lunch. Served with the Sriracha Hot sauce and steamed rice. MmmMmmmmmMmmmm!

Skillet-Grilled Catfish

If you like catfish, it's a enjoyable recipe. If you don't like catfish, it's an okay recipe. Before you coat the fish in the bag, maybe you could sprinkle salt, pepper, lemon juice on the fish ahead of time and keep it in the fridge for a while to weaken the strong fish taste.

Pork Chops with Blackberry Port Sauce

Just had this for dinner. It was a surprisingly better than I thought it would be. I used some blackberry jam I've had for months and wine that has been sitting on my counter for weeks! Don't overcook your pork!

Pico de Gallo Chicken Quesadillas

I just had this for dinner and it was really good. I used a jar of salsa I picked up in a grocery store but still, it was very good. My first Quesadilla I've ever made? Huge Success! :)
