Whole Wheat Banana Nut Bread

Very moist and tasty. My changes: 1) substituted 2% plain Greek Yogurt for the oil. 2) I used about 1/4 of the nuts as a topping: I combined the, with cinnamon and light brown sugar. 3) Made in cupcake pans. Made15 cupcakes. Baked at 300 degrees for about 25". Used paper cupcake liners. They stuck a bit more than a typical cupcake. Perhaps I'll try a bit of Pam next time. 4) Used about 1 1/4 cups VERY ripe bananas (4 small bananas). 5) Used pecans Definite repeater!

Gazpacho

Very easy. I didnt bother "mincing' the vegetables. Just cut into chunks and put it all in food processor. Reduced tomato juice to 3 cups - because i like chunky gazpacho - otherwise it would have been too soupy. Also, needed a bit more flavor. I added some fresh dill and a little bit of tabasco sauce for some 'kick.'

Baked Honey Mustard Chicken

Amazing and very easy to make. simple. I cut paprika in half, otherwise followed recipe. Used chicken tenders, marinated in sauce overnight. Then baked with plenty of sauce - so they ended up moist and tender. Served with coucous with extra sauce in pitcher on the side. Lots of compiments. Great for company.

Cold Vegetable Pizza

Great recipe - i made with some modifications. Made in a 17" x 11" cookie sheet and made it in the form of an American Flag (see "Patchwork Veggie Pizza for a version with a patchwork Quilt). I omitted the olives and used red peppers and mushrooms for the "stripes". For the "stars" i used blueberries (I couldnt think of a blue veggie). For that part of the 'flag" i use a sweet pre-made fruit dip (T. Marzetti). Guests were most impressed with design and it was devoured. A little messy. I cut in 2"x2" squares. Next time i's cut in smaller squares.

Patchwork Veggie Pizza

I'm giving it 4 stars because i used the beauitful design, but did not make this actual recipe. Used this idea of a 'patchwork quilt" pattern for a July 4th party. Made "stripes" of red peppers and mushrooms. And blueberries for the stars - used a sweet fruit dip (T. Marzetti). Guests were very impresses with this design. Used this design but made recipe for "Cold Vegetable Pizza" -

Chicken and Mushroom Saute

Pretty good - but a little bit bland. Added onion powder and helped a little bit. Next time i plan to add saute'd onions. I didn't have any cornstarch in the house, so i mixed flour-cold water combo to thicken the sauce. That worked will. NOTE: If you use flour and water to thicking something, make sure the water is very cold otherwise the mixture is lumpy. Froze well too.

Seven Layer Taco Dip
