Whole Wheat Banana Nut Bread

Very moist and tasty. My changes: 1) substituted 2% plain Greek Yogurt for the oil. 2) I used about 1/4 of the nuts as a topping: I combined the, with cinnamon and light brown sugar. 3) Made in cupcake pans. Made15 cupcakes. Baked at 300 degrees for about 25". Used paper cupcake liners. They stuck a bit more than a typical cupcake. Perhaps I'll try a bit of Pam next time. 4) Used about 1 1/4 cups VERY ripe bananas (4 small bananas). 5) Used pecans Definite repeater!

Gazpacho

Very easy. I didnt bother "mincing' the vegetables. Just cut into chunks and put it all in food processor. Reduced tomato juice to 3 cups - because i like chunky gazpacho - otherwise it would have been too soupy. Also, needed a bit more flavor. I added some fresh dill and a little bit of tabasco sauce for some 'kick.'

Baked Honey Mustard Chicken

Amazing and very easy to make. simple. I cut paprika in half, otherwise followed recipe. Used chicken tenders, marinated in sauce overnight. Then baked with plenty of sauce - so they ended up moist and tender. Served with coucous with extra sauce in pitcher on the side. Lots of compiments. Great for company.
