Aside from the fact that it looked like a phyllo dough factory exploded in my kitchen, these were great! I did modify a little.. I used freh baby spinach instead of frozen. I chopped and sauteed them with garlic and onion until wilted. Once it cooled I drained it really well, added two eggs to the mix and then followed the rest of the recipe to a tee. Yes, it takes a little longer to make this my way but to me the flavor was totally worth it! This recipes is going to be one of my "go to's" from now on. A suggestion though... it's soooo much easier if you have two people doing this especially if you've never done it before. Otherwise, thanks for sharing such a GREAT recipe! Happy eating everyone :)

Indian Tomato Chicken

This is a fantastic recipe! I did modify it a bit as some recommended but was no less pleased with the result. For starters, I did not use bay leaf or nutmeg in mine. I did add chopped green/red bell pepper, twice the tomatoes, and 3-4 dried chilis for heat, and adjusted the spices to taste. I cooked 45 covered, 45 uncovered and had a lovely thick sauce to go with. I served mine with a simple saffron rice with peas and carrots mixed in along with naan. I think the only thing I will try different next time is to use lamb as the meat. Otherwise, thanks for a great recipe!

Moroccan Lentil Soup

I have to agree with some of the other reviewers on the whole Indian vs. Moroccan thing. I personally found it to lean more towards Indian flavours with the garam masala but it was a throughly enjoyable dish and it has been - per my family - put on the favorites list. I did modify a bit. I added a very small pinch of saffron, only used 1 tsp of fresh ground cardamom, used a mix of fresh and canned tomatoes, and put 1 small potato (cut in a fine dice) in about 20 min before it was done. I did not puree any of the soup as it was thick enough for my tastes. All in all a fantastic meal... Thanks for sharing!

Turkey Wild Rice Soup II

This was a nice option for using up the last of the Thanksgiving day turkey. Warm, creamy and filling. The only reason I didn't give 4 stars is that I followed the directions to a tee and found it was really lacking in seasoning (for my taste and that may just be a regional difference). Otherwise, my Dad and I really enjoyed it! Thanks for listing!

Authentic Middle Eastern Hummus (Chummus)

This was simple and easy to make - And WOW did it make a LOT - but a little bland for my tastes. I prepared as directed but added garlic while boiling, a little more than 1/4 cup fresh lemon juice and sea salt. Rather than top with olive oil, I lightly dusted it with paprika (wish I would have had smoked) and it turned out great. Thanks for a wonderful recipe!

Green Chili Stew

This is a fantastic recipe to try if you've never made Green Chili Stew before. I did make mine with ground beef rather than beef stew meat or pork and used fresh roasted green chili (living in NM has it's advantages when it comes to getting authentic ingredients for this one!) that I purchased from Sunflower Market. A little tweaking of the spices to suit my personal tastes - I like a lot of garlic - fresh tortillas from a local establishment and we were in total green chili bliss! Suffice it to say I won't really need to be buying from local restaurants as I have found something just as good, if not better! Thanks for posting a great recipe :)

Super-Delicious Zuppa Toscana

Made this for the first time tonight and will definitely be making it again! The overall flavor was familiar but with a most definitely distinct Italian twist that sent people back for seconds. I used half n half (all I had on hand) 1 1/2 cup instead of cream, Yukon Gold potatoes (just because I think they have a better taste) and I crushed my own red peppers (approx 5) instead of using flakes. The only tweaks I will try next time is maybe adding some potato flakes to thicken the mixture a bit. Otherwise, was great! Thanks for posting a wonderful recipe :)

BBQ Country Style Ribs

So I just made these ribs (bone out) for the first time and can I just say they are AMAZING! Some of the reviews state their ribs were tough and dry, etc.. I don't know what they did differently than I did but mine were tender and juicy which actually says quite a bit since the cuts I got were less than ideal (oh well live and learn) The only things I did different were to cook the ribs covered with foil for the first two hours and then cook the remaining time uncovered with the bbq sauce on it. I will most definitely be using this method of cooking short ribs from now on with many different styles of marinades and sauces as suggested by other reviewers. Thanks to Coolundrprsr for posting!
