Gramma's Date Squares

These are AWESOME! I wanted to make a healthier version so I substituted the pastry flour for whole wheat, and halved the sugar in the crust, completely left it out of the filling (dates are sweet anyway) and used 1 cup applesauce instead of butter. Also I only used 8 ounces of dates because that's all I had on hand and just squeezed half a lemon into the filling mixture. I added maybe a tablespoon of kairo syrup to the filling, to help it thicken. I don't know if it would have tasted better if I hadn't altered the recipe, but these tasted amazing the way I made them!! And they were super duper easy.

Belgian Waffles

I'm on a diet and couldn't eat these but I made some for my hubby and he says they are hands down the best waffles he's ever had!! But now he's a little bummed because we figured out he just ate 2000 calories in waffles LOL

Baklava

Wow this was actually very very easy and my family said it was probably my best yet!! I bake a ton, and I do it all mostly from scratch so for my entire family to agree on that is a big deal!! I found this recipe to be SUPER EASY too which is the coolest part! 3 things I did specifically--1) I made double the honey sauce, as suggested by other reviewers and 2) I bought good quality, local honey, as I've heard the Greeks use premium honey and that makes a big difference... 3) As other reviewers suggested, I toasted the nuts ahead of time. Don't get too caught up in counting out the exact perfect number of Phyllo sheets...it really doesn't matter too much.

Cream Puffs

I think some of the reviewers are making this recipe harder than it is... Some people are saying they followed the instructions and it didn't turn out right? I thought this recipe was super, duper easy, it took less than 30 mins including baking time. and required no adjustments. I threw a cup of water and a stick of butter in a pot and turned it on high. took it to a boil, threw in a cup of flour and the salt, mixed well, then took the pot off the stove and beat in eggs one at a time as per recipe instructions. I put the batter in a plastic baggie and dipped it out on a cookie sheet, 1 tbsp servings, and baked for 22 mins at 425. they came out PERFECT!!! my husband LOOOOOOOOVED THEM!!! I mixed about half a large package serving of vanilla pudding with a whole container of cool whip. half the mixture I threw in some melted sweetened bakers chocolate (it came out looking like cookies and cream--yum!) and then I put these in two baggies and pipped them onto the cooled puffs... Just punched them down in the center with my fingers to make a little bowl for the cream...

I just made these this morning for a new years day breakfast! Oh my gosh these are GOOD!!! I didn't have any wheat germ, which probably would have made them even yummier (if that's even possible?) Thank you for sharing this amazing recipe!!

Mom's Zucchini Bread

This is an AMAZING recipe!! SO SO GOOD! Can't recommend it enough!! UPDATE: I recently considered the fact that while this recipe is DELICIOUS it's not healthy enough for a regular treat. I'm new to revising recipes...but in an attempt to make it a little more nutritious, I substituted 1 cup applesauce for the oil; 1 3/4 cup brown sugar instead of 2 1/4 cup white sugar; 3 1/2 cups whole wheat flour instead of 3 cups white flour (to balance the sugar reduction); 4 cups of zucchini as opposed to 2 cups. I find the added zucchini doesn't make the bread too moist and adds flavor and nutrition to the recipe. I also leave out the nuts (just my preference) My husband told me he actually prefers my healthy version and everyone has raved about this bread recipe either way. My thoughts--if you love zucchini bread as much as we do and want to eat it more often, try to come up with a healthier version for your family. It will not take away from the flavor whatsoever, and you may find you actually prefer it. Also DO NOT DRAIN THE ZUCCHINI!! The water in the squash is what makes this recipe so MOIST AND DELICIOUS!! Everyone who tries it will rave about the moisture so leave it :)

Cranberry Sauce

This was really WONDERFUL!! I think I just converted my whole family from canned to the real thing this year. I left the cranberries on the stove a lot longer than suggested--I wanted them to be really thick. Let them pop away for a good hour. As they were cooling I tasted and tweaked, added some brown sugar and was liberal with the cinnamon.

Colleen's Potato Crescent Rolls

I made these at Thanksgiving and neglected to see where you're supposed to cover them for 1 hour after rolling them into crescent shape. Other than that I followed the recipe pretty much exactly. They came out absolutely delicious anyway, and were gobbled up and complimented by all!

Yummy Sweet Potato Casserole

AMAZING!!! I made this for Thanksgiving and it was a HUGE HIT!! I would recommend it to anybody. It is super easy too! I did bake 6 potatoes on a cookie sheet, which amounted to about 5 cups mashed. I added a tsp of cinnamon and increased vanilla to 1 tsp. I would recommend baking the yams because I just think of baked potatoes as more intuitive to boiling and it made them super easy to peal. Some say this method makes it tastier too. I would think this would be the case. Great dish!!

Red Velvet Cake

I gave this 5 stars but I followed the extremely helpful suggestions from "Kristin" who reviewed this recipe on Oct 19 2009. Her review is on the first page. Without her suggestions, I don't think this would have turned out very good at all. This cake turned out wonderful. The frosting was not easy to make but it was well worth it. I made this for my Mom's birthday and she said it was the best cake she'd ever had (and she is a baker herself, and very blunt person--would have told me if it wasn't so great without blinking twice, lol) I was VERY PROUD of myself. But like I said, follow "Kristin" the reviewers tips to the T. She must know what she is talking about.
